CREAMY CORN with Jalapeno Recipe
Follow this recipe for a CREAMY CORN with jalapeno that tastes great and is a great side dish.
Ingredients:
1/2 yellow onion
1 jalapeno pepper
2 garlic cloves
2 cups of frozen or fresh corn
3 tablespoons of butter divided
1/2 cup of heavy cream
1 cup of milk
2 tablespoons of flour
salt and pepper to taste
1 teaspoon of sugar
1/4 cup of grated Parmesan cheese.

Here's what you'll need to make it!
1/2 package cream cheese, room temperature (equals 4-ounces)
1/4 cup sour cream
2 tablespoons mayonnaise
Juice of 1/2 a lime
3/4 teaspoon Kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon white or black pepper
1 (15-ounce) can whole-kernel sweet corn, drained
3/4 cup freshly grated Cheddar cheese
1/4 cup finely diced jalapeños (about 1-2 jalapeños, seeds removed if desired)
1/4 cup sliced green onions
2 tablespoons finely chopped red bell pepper
1 tablespoon finely chopped cilantro
Instructions:
In a medium-sized mixing bowl, combine the cream cheese, mayonnaise, sour cream, lime juice, salt, garlic powder, and pepper. Use a handheld mixer on medium-high speed to blend until the mixture comes completely together and is smooth in texture.
Add the remaining ingredients and stir until evenly coated in the sauce. Serve right away or refrigerate until ready to serve.

Corn on the cob
4 tbsps melted butter
1/4 cup mayo
1/4 cup sour cream
1 package Cotija cheese
tajin or chili powder
1/4 cup cilantro
2 limes
All-Purpose Seasoning
1 tsp garlic
1 tsp white sugar
Directions:
Preheat oven or Grill to 400 degrees. Clean corn and brush with oil or melted butter. Season with salt, pepper, garlic, onion powder. Grill or bake for 10-15 minutes or until tender. If using the oven, place corn under the broiler for a few minutes to get some char.
Mix together the mayo, sour cream, lime juice, sugar, garlic, and season to taste. In a separate bowl, break apart the Cotija cheese and add some lime zest. Brush mayo mixture onto the corn and then spoon on the cheese. Top with Tajin or Chili powder and serve.
Mexican Street Corn on the Griddle --Corn Esquites
This Mexican street corn on the griddle is a fantastic flat top grill side dish recipe to make on your Blackstone, Camp Chef, or Pit Boss… It’s so good, that you’ll definitely want seconds.
Actually, we had a side dish similar to this at a local Mexican restaurant recently for the first time. It was so dang delicious that we went back to the restaurant again just for this awesome Mexican street corn, which was called corn esquites on the menu… and so of course we had to try to make our own version of this side dish on the griddle.
Think of this Mexican street corn on the griddle as a rich and decadent, creamy, almost sinful corn side dish… made with cotija cheese (similar to a parmesan), it actually resembles an Alfredo. Serve it warm and garnish with fresh cilantro and some lime juice. Delicious!
