Today I’m going to be sharing with you my favorite way to enjoy rice and beans, in a MORISQUETA now let me tell you I’m not from Michoacán but I sure enjoy all of the traditional dishes this beautiful state has to offer ☺️ I grew up eating this but in Durango we didn’t know it by morisqueta ???? the simple meals are always the best!

Ingredients:
4 roma tomatoes
1 tomatillo
Chile serranos I use 5
1/8 onion
2 garlic cloves
3 Chile guajillo or puya
Chile árbol I use 5
1/2 tsp oregano
2 lbs pork rib tips
2 lbs pork country style ribs
1/2 tsp cumin
1/2 tsp thyme
1 tsp black pepper
Salt to taste
3 bay leaves
For the rice:
3 cups water
2 tbsp salted butter
1/8 onion
1 garlic clove
1 tsp garlic salt
2 cups long grain rice
To serve
Queso cotija
Frijoles de la olla

INGREDIENTS
1 1/2 to 2 lb ( 680 to 907 g ) cross-cut beef ribs
1/2 tsp garlic powder
1/2 tsp seasoned salt
1 tsp Trader Joe's Onion Salt blend
1/4 tsp cracked black pepper
2 cups (473 ml) water
1 medium to large tomato
2 tomatillos
1 to 2 jalapeños
3 cloves garlic
1 1/2 tsp beef bouillon powder
1 1/2 tsp tomato chicken bouillon powder
salt and pepper to taste
1/2 of a small onion
1 to 2 dried bay leaves
fresh epazote (optional)
MEXICAN RED RICE
1 cup (195 g) long grain rice (rinsed)
1 1/4 cup (295 ml) water
1 Tbsp (10 g) chicken bouillon powder
2 medium tomatoes
2 cloves garlic
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground cumin
1/2 of a small onion
pinch of salt
pepper to taste

Stewed Beef Ribs In Salsa
Flanken Style Short Ribs| Quick and Easy Recipe
What I’m eating?
Flanken Style Short Ribs are one of the easiest and fastest recipes to make. A simple marinade prep and easy transition from stovetop to oven make this a perfect weeknight meal. Since we are all cooking at home, we might as well get our culinary skills on and try something new.
The #flankenstyleshortribs are already precut and sliced thin across the bone so all you have to do is prep the #beefribs for cooking.
First let the ribs come to room temperature about 30 minutes or so. I lightly season them with dry seasonings: salt, pepper, onion powder, garlic powder and beef bouillon. You can omit the salt in the beginning, but I add such a minimal amount of bouillon, so it’s not salty.
Ingredients For the Marinade:
I have an everything but the kitchen sink approach to my beef marinade that includes:
Approximately 2 tbsp of each
Soy sauce
Goya culantro base (green)9
Chopped garlic
Ketchup
Approximately 1 tsp of each
brown sugar
jerk spice (I ran out so I used 1 Tbsp jerk sauce)
soy sauce
lime juice
Sesame Oil
rice wine vinegar
honey
duck sauce (or plum or hoisin sauce)
After seasoning the beef I pour 3/4 of the marinade over it and let it hang out for about 30 minutes if cooking right away. If you have the time to let it rest for a few hours by all means...save some marinade to baste the ribs before they go in the oven.
Preheat oven to 400 degrees while steak is cooking on the stove
Pour oil in a pan that can go in the oven
Heat pan medium - high heat
When pan is very hot add a single layer of ribs
Sear ribs on both sides till outside forms a dark crust
Ribs are thin so they wont take long to cook through (approximately 2 minutes each side)
Baste ribs with remaining marinade
Put ribs in oven for 7-10 minutes
Done

1 tablespoon (15 ml) vegetable oil
6 pounds (3 kg) beef short ribs, fat trimmed
1 can (6 ounce 170 g) chipotle peppers in adobo sauce
4 cloves garlic, minced
4 ounces (115 g) tomato paste
1/4 cup (120 ml) fresh lime juice
2 tablespoons (30 ml) apple cider vinegar
1 tablespoon (7 g) ground cumin
1 tablespoon (18 g) salt
1/2 cup (240 ml) beef stock
1 large white onion, finely chopped
2 bay leaves
12 Homemade Tortillas
2 avocados, sliced
Pico de gallo
Sour cream
Cover and cook in slow cooker for 6 hours on HIGH or 10 hours on LOW, until the meat is falling off the bone.
