How To make Mexican Style Bow Ties
8 oz Bow Ties or Elbow Macaroni
-or other med. pasta shape, - (uncooked) 8 oz Lean ground beef
16 oz Canned kidney beans
-or pinto beans, drained 1/8 ts Ground cumin
1 t Chili powder
2 md Tomatoes
seeded & chopped
16 oz Canned whole kernel corn
:
drained 1 sm Green bell pepper -- chopped
1/2 c Shredded Cheddar cheese
1/2 c Sliced green onions
1 c Low-fat, plain yogurt
1/2 c Medium salsa
1/2 c Broken tortilla chips
Prepare pasta according to package directions; drain. In a medium skillet, brown ground beef and drain. Add beans, cumin and chili powder; heat through. In large bowl, combine pasta, meat mixture, tomatoes, corn, green pepper, cheese and onions. In small bowl, combine yogurt and salsa. Add to salad mixture and toss well. Serve warm or cold. Garnish with tortilla chips and serve with additional salsa. Serves 6 to 8 Each serving provides: 393 Calories; 22.8 g Protein; 54.4 g Carbohydrates; 10.5 g Fat; 34.9 mg Cholesterol;
561 mg Sodium. Calories from Fat: 23%

► 1 tbsp of olive oil

✦INGREDIENTS:
• Asparagus cut in thirds and roasted with:
• olive oil
• salt/pepper
• garlic powder
• thyme
• rosemary
• Bow tie (Farfalle) Pasta *al dente
• 1 tsp salt to water
• 1 tsp olive oil to water
• Ground Italian sausage
• 3 tbsp butter
• 2 tbsp olive oil
• 8 - 16 oz sliced portobello mushrooms
• salt/pepper
• 1 tsp Italian seasoning
• 1/4 tsp red crushed pepper
• 3 tsp minced garlic
• half of 1/4 cup or 1/8th white cooking wine
• 1 cup chicken broth
• add your roasted asparagus
• 1/2 cup grated parmesan
• 1/2 - 1 cup pasta water
• *top with parmesan and chopped parsley

Bowtie Pasta Beef Skillet
Ingredients
• 1 pound ground beef
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 2 cups uncooked bow tie pasta
• 1 can (14-1/2 ounces) diced tomatoes, drained
• 1-1/3 cups beef broth
• 1 can (8 ounces) tomato sauce
• 1 tablespoon Worcestershire sauce
• 3 medium yellow summer squash, thinly sliced
• We used 1 squash and 1 zuchinni
• 3/4 cup chopped green pepper
• 1 cup shredded Parmesan cheese, divided
Directions
• 1. In a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle with salt and pepper. Stir in the pasta, tomatoes, broth, tomato sauce and Worcestershire sauce. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes.
• 2. Add squash and green pepper. Cook, uncovered, for 3-4 minutes or until pasta and vegetables are tender, stirring occasionally. Add 1/2 cup cheese; cook 1-2 minutes longer or until cheese is melted. Sprinkle with remaining cheese.

Ingredients
1 pound bow ties pasta (cooked)
1/2 cup mayonaise
2 tablespoons sour cream
2 teaspoon salt
2 teaspoons pepper
1 teaspoon cumin
1 lime (juice and zest)
2 cloves garlic (grated or chopped finely)
3 scallions (chopped)
1 handful mint (chopped)
5 pickled jalapeno slices (chopped)
