Recipe - Spicy Mexican Quiche Cups
INGREDIENTS:
●1/2 lb bulk hot Italian sausage
●1/2 cup shredded Cheddar cheese (2 oz)
●1/2 cup shredded mozzarella cheese (2 oz)
●1/2 cup chopped jalapeño chiles, seeds removed, if desired
●6 eggs
●6 tablespoons Old El Paso Thick 'n Chunky salsa
●1 box Pillsbury refrigerated pie crusts, softened as directed on box

* Mexican crustless quiche *
1 tsp ghee or coconut oil plus a little extra to grease tin
30g red onion, finely chopped
2 spring onions, chopped
1 red chilli pepper, chopped
60g cherry tomatoes, halved
70g tinned red kidney beans, drained
5 eggs plus 2 egg whites, whisked
1⁄2 tsp ground cumin
1⁄2 tsp chilli powder
a pinch of sea salt
a pinch of ground black pepper
1⁄2 tsp ground coriander
30g Cheddar cheese, grated (use dairy free cheese if preferred)
Serves 2
Per serving:

10g carbs
27g protein
Grease the sides and base of a 15x15cm square tin with a small amount of ghee or coconut oil.
Preheat oven to 180 ̊C/350 ̊F.
Melt the remaining ghee / oil in a frying pan over a medium heat. Add the red onion and sauté for 2-3 minutes, stirring frequently.
Add the spring onions and sauté for 2-3 minutes, stirring occasionally.
Add the red chilli pepper, cherry tomatoes and kidney beans. Stir well and cook for 2-3 minutes, stirring occasionally. Remove pan from heat.
Place the remaining ingredients in a jug or bowl. Add the cooked mixture from the frying pan and stir well.
Pour the mixture into the tin. Stir gently to distribute evenly.
Bake for around 25 minutes, or until the quiche is golden. Serve.
Store any leftovers in an airtight container and refrigerate for up to 2 days.

So many people are dieting and need dishes that will leave them satisfied. This one does the trick for when 5 Bite Granny shares her Mexican Quiche Recipe for the 5 Bite Diet, the ones that need it will make it, and be thrilled!

This One Pan Mexican Quiche recipe is ideal perfection for those 5 bite diet folks that love Sriracha Chilies and a little Monterey Jack Cheese. 5 Bite Granny & Grandpa love this awesome dish.
Why am I calling it Mexican? Take one look at the ingredients. Of course this not authentic, but my middle name is Juanita, soooo…. what the Heckle & Jeckle!!! I love it and it works on this diet!
When it comes time to serve this dish, I suggest a side of sour cream as well as salsa. Your guests might like it plain, but I think some sour cream, ranch dressing, and a little salsa adds to the nice flavors.
When cooking this for more than the 5 Bite Dieter, triple the ingredients to allow two thirds of the servings for them (Grandpa) and one for (me)! LOL! (That is how I make ours… and why you see three eggs in the video.)
INGREDIENTS
• 1/2 Cup Monterey Jack Cheese, shredded or grated
• 1/4 lbs Lean Ground Beef or Turkey
• 1/8 Cup Yellow Onion, diced
• 1/2 Sriracha Chili, diced
• 1/8 tsp onion powder
• 1/8 tsp garlic powder
• 1/2 tsp cumin
• 1/2 tsp chili powder
• 1/8 Cup catsup
• 1/8 Cup Half and Half
• 1/2 Tbsp All Purpose Flour
• 1 Egg
Directions
1. Spend the time to be sure that you have adequately shredded or grated 1/2 Cup Monterey Jack Cheese, and then sit it in the refrigerator until needed.
2. In a skillet, cook the ground beef, sriracha, and yellow onion over high heat until no longer raw. Drain the fat.
3. In the skillet, to the side of the mixture, beat together the half-and-half, spices, catsup, egg, and all-purpose flour. Pour over the items in the skillet. Reduce the heat to medium and mix in very fast, like scrambled eggs.
4. Sprinkle half of cheese into the mixture in the skillet, and then let the remaining cheese rest on top, undisturbed.
5. Turn the fire to low and cook your quiche until the mixture is solid. Let stand for 3-5 minutes before serving.
