How To make Mexican Quiche 2
1 Tortilla, 6" flour
3 oz Sausage
1 Egg
1/8 ts Salt
2 oz Cheese, jack
1 tb Green pepper, chopped
1/4 c Milk
Heat tortilla and place in small greased dish. Top with half of the cheese. Cook sausage and pepper and add to dish. Mix together remaining ingredients and pour over dish. Top with rest of cheese. Bake at 350 degrees for 30 to 35 minutes.

RECIPE:
Easy Crustless Quiche
Ingredients:
5 eggs
¼ C heavy cream or milk
1 tsp salt
1 tsp pepper
¼ C chopped onions
½ C cooked diced ham
¾ C chopped spinach
½ C shredded cheddar cheese
Directions:
1. Preheat oven to 325 degrees and grease a 9X9 pan.
2. In a large mixing bowl, add in the eggs and cream and whisk thoroughly.
3. Add in the salt/pepper, onions, ham, spinach, and cheese.
4. Stir until everything is completely mixed.
5. Pour the mixture into the greased pan and bake for approximately 30 minutes or until the eggs are set.
6. Cut, serve, & enjoy!

Grandma Kathy's Mexican Pie (A Crustless Quiche)
Even people who do not like quiche, tend to like Mexican Pie. This simple family recipe has been a favorite for several generations.
Ingredients:
1 pound (450g) ground beef
Homemade Taco Seasoning
1/2 cup (120mL) water
½ cup (75g) chopped onion (or 2 teaspoons (13g) dried minced onion)
4 ounces (113g) diced mild green chiles
1 cup (90g) shredded cheddar or jack cheese
1 ¼ cups (300mL) milk
¾ cup (90g) biscuit mix
3 eggs
10 inch (25.4 cm) diameter, deep dish, pie pan
Method:
Heat oven to 400*. Lightly grease the pie plate. Cook beef until browned. Drain fat. Stir in taco seasoning. and water. Bring to a boil; then simmer for 10 minutes. Spread in pie plate. Sprinkle with onions, chiles and cheese. Put remaining ingredients in blender or bowl and beat until smooth. Pour into pie plate. Bake 25 – 30 minutes, or until knife inserted halfway between center and edge comes out clean. Let stand 5 minutes before cutting and serving. Serves 6.
Note: This recipe must be made in a pie pan in order to form a crust. This recipe also can be doubled and cooked in a 10 inch x 15 inch (26 x 38 cm) baking pan.
Homemade Taco Seasoning:
2 teaspoons (13 g) instant minced onion or 1 teaspoon (6.5g)onion powder
½ teaspoon (3.25g) ground cumin
½ teaspoon (3.25g) crushed dried red pepper (optional)
1/2 teaspoon (3.25g) salt
1 teaspoon (6.5g) chili powder
1/2 teaspoon (3.25g) dried oregano leaves or ¼ teaspoon (2g) ground oregano
½ teaspoon (3.25g) cornstarch
½ teaspoon (3.25g) instant minced garlic or garlic powder

Mexican Style Quiche - Must Try Original Recipe!!
I'm super excited about this Mexican-Style Quiche recipe!! So I've definitely had a Mexican food craving lately, although I would eat it everyday if I could. Recently, I made White Chicken Chili and since then I've had roasted green chilis on my mind; they seem to be making their way into a few of my recipes. This recipe is no exception! I was originally planning on doing a traditional style quiche when suddenly the idea of a Mexican style quiche with green chilis popped into my mind. I was instantly drawn to the idea (not to mention my mouth started watering). So I came up with this wonderful Mexican style quiche recipe. Below you will find the ingredients as well as the directions on how to make this spicy twist on a traditional quiche. Thanks for watching! If you have any questions please feel free to ask.

Ingredients:
1 - frozen pie crust
3 - large eggs
2oz - diced green chilis
2 - heaping tablespoons flour
1/2 - tsp salt
1/4 - white onion chopped
1 - cup half and half
1.5 - cups Mexican style cheese
3 - tbsp green enchilada sauce
1 - diced roma tomato
optional chopped fresh cilantro, salsa, and sour cream for topping
Start by poking holes in frozen pie crust that has been properly thawed. Then place pie crust in an oven that has been preheated to 375° for 10-12 minutes until golden brown.
Sauté onions till translucent and then add green chilis and cook for several minutes.
Once pie crust is browned add a layer of cheese to the bottom of the crust and bake for several minutes to seal the bottom of the crust (this will keep the crust from getting soggy.)
Whisk eggs and half and half, then add sautéed onions and chilis.
Once the pie crust and cheese are done place half of the green enchilada sauce at the bottom of crust and then fill with the remainder of cheese holding back a small amount for topping. Then add half of the tomato.Pour egg mixture over the cheese and tomato. Then add the remainder of the tomato on top of the pie filling. Drizzle the rest of the green enchilada sauce on pie filling.
Bake for 35 minutes. Top with salt and let cool for 5-10 minutes.
Serve up and enjoy :)

This is a family favorite sure to please everyone - this is a quiche that even men absolutely love. This Mexican Quiche is a great addition to any brunch menu or dinner. Easy to make ahead and preheat when guests arrive. The only downside is that there are a lot of ingredients for this recipe but substitutions can easily be made.
