How To make Mexican Cinnamon Rice

onion, chopped

garlic clove, finely chopped

margarine or butter

regular rice, uncooked
1/2
cup
currants

chicken broth

teaspoon
cinnamon, ground
1/4
teaspoon
salt
1
cilantro, fresh, snipped (to taste)
Directions:
Cook and stir the onion and garlic in the margarine in a 3 quart saucepan until the onion is tender. Stir in the remaining ingredients except the cilantro. Heat to boiling, stirring once or twice, then reduce the heat and simmer, covered, 16 minutes. (DO NOT lift the cover or stir.) Remove from the heat and fluff the rice lightly with a fork. Recover and let steam for about 10 minutes before adding the cilantro.

Basic Rice Pudding
Serves 6 to 8
Ingredients:
1 cup medium grain white rice
4½ cups whole milk
1 tablespoon butter
½ cup sugar
1 cinnamon stick
1 teaspoon pure vanilla extract
½ cup heavy cream
ground cinnamon (for garnish)
Directions:
1. Place the rice, milk, butter, sugar and cinnamon stick into a non-stick saucepan. Bring the mixture to a simmer, reduce the heat and simmer gently, covered but stirring occasionally for 35 minutes, or until the rice has absorbed the liquid. Stir in the vanilla extract, the heavy cream and any other flavoring ingredients you choose. Loosen to the desired consistency.
2. Remove the cinnamon stick and decide if you are serving this warm or cold. If you are serving this warm, spoon the pudding into bowls, topping with a sprinkling of ground cinnamon or a little heavy cream, some nuts, raisins, chocolate, or whatever you like. If you are serving this cold later, transfer the pudding to a baking dish and cover with plastic wrap (pressing the wrap right down onto the surface of the pudding). You may need to loosen the pudding again once it is cool.

CINNAMON RICE - COOKING WITH FOOD STORAGE PREPS [Prepping 365: #296]
In today's video, I make some cinnamon rice which is a great sweet treat made from our food storage preps.

Make a food menu plan:
The recipe:
1 cup of rice
1 cup of water
1 cup of evaporated milk
2 TBS sugar
1-2 tsp cinnamon
Raisins or dried fruit to top
Mix everything except the raisins. Bring to a boil. Cook rice as you normally would according to package instructions (usually 15-20 minutes).

Cinnamon Rice Pudding

INGREDIENTS
2 cups (450 grams) rice
2 cups (500 ml) milk
Lemon zest
Lime zest
2 cinnamon sticks
1 ounce (30 grams) butter
1/2 cup (100 grams) sugar
1 teaspoon vanilla extract
Cinnamon (for topping)
PREPARATION
Heat a saucepan over medium heat, add water in it and bring it to a boil.
Add the rice, cover the pan with a lid, and cook it according to the instructions on the package.
When the rice is ready, pass the rice through a strainer and drain it of the excess water.
Pour the milk in a separate saucepan, and heat it over medium heat. Shred lemon and lime zest in the pan.
Add the cinnamon sticks, butter, and cook until the butter melts. Add the cooked rice, sugar, and vanilla extract.
Bring it to a boil and cover it with a lid. Simmer everything for 10 minutes.
