Mexican Chicken Lasagna!
Today I'm sharing my easy Mexican-Style Chicken Lasagna Recipe. This is a delicious tortilla casserole. It's mild and cheesy, perfect comfort food!
Mexican Chicken Lasagna Recipe
Yield: 4 big servings
Note: The dimensions of my round baking dish are: 8.5” diameter, 2.5” high, capacity 2.5L/2.5Q.
Ingredients:
2 potatoes, peeled
Olive oil
1 large onion, chopped
2 chicken breasts, chopped or diced
2 pints (1 liter) of tomatoes with the juice
1/2 tbsp (3 g) cumin
1/4 tsp powdered oregano (or ½ tsp dried oregano)
1/2 tsp (5 g) salt
Cheddar cheese: I have about 450 g or 1 lb
5 large flour tortillas
Directions:
1. Chop your potatoes and boil for about 25 minutes until they are tender. Drain and set aside.
2. Over medium heat, warm the olive oil in a pan and cook the onion until it's soft, about 7 minutes.
3. Add the chicken and cook for another 5 minutes or so until it's mostly visibly white.
4. Add the potatoes and cook for 5 minutes.
5. Preheat the oven to 375 F, 190 C, gas mark 5.
6. Add the tomatoes and seasonings to the pan. Let it all simmer until it really thickens and most of the liquid is boiled off, about 15 minutes.
7. Layer the lasagna: 2 tortillas on the bottom, a layer of chicken mix, a layer of cheese, 2 tortillas, a layer of chicken mix, a layer of cheese, 1 tortilla and a layer of cheese.
8. Bake uncovered for about 25 minutes until it's all bubbly and smelling divine. Brown the cheese under the broiler.

Lasagna sheets
300 gram chicken mince
1/4 cup oil
1 tsp salt
1 tsp ginger paste
1 tsp garlic paste
1 tsp red chilli flakes
1 onion cubes
1 capsicum cubes
1/2 cup tomato ketchup
For white sauce
2 tbsp butter
2 tbsp plain flour
3 cup milk
1 tsp salt
1 tsp oregano
1 tsp white pepper
For topping
Cheese crushed
Olives
Chilli flakes

Green Chile Chicken Lasagna
Ingredients:
2 large cooked chicken breasts, or half of a rotisserie chicken shredded
½-cup flour
½-cup butter
4 cups of whole milk
1/2 cup green chile
1-teaspoon chicken bouillon
1-teaspoon salt
10 oz. shredded mozzarella cheese
8 oz. shredded Italian cheese mixture
Zucchini ribbons
Oven ready lasagna noodles
Directions:
Cook chicken breasts in an instant pot for 30 minutes on high pressure. Once cooked, shred the chicken using two forks. You may also use leftover rotisserie chicken, if you have some. Set the chicken aside. Heat a large saucepan on medium and add the butter. Once the butter melts, add the flour to make a rue, and cook for two minutes, stirring constantly -- you do not want the mix to brown. Now gradually add the milk, one cup at a time whisking constantly. You will need to stay by the stove the entire time because the sauce can burn easily. Add green chile to the sauce. Allow it to come up to a mild boil, and continue adding the milk until it is fully incorporated. Continue whisking until the sauce has fully thickened. It should have the consistency of gravy. Set aside.
Now it is time to assemble. Using an 8 x 12-lasagna pan, start by coating the bottom of the pan with the white sauce. Then add a layer of lasagna noodles, chicken and cheese. Repeat the process rotating the lasagna noodles with zucchini ribbons. Bake in at 350 degrees for 30 minutes covered with foil. Take off the foil and bake for five minutes uncovered. Let the lasagna cool for at least 15 minutes after it is cooked. If you try to cut into it before that, the layers will not hold up. Enjoy!
