sliced 1 1/2 cups cubed cooked ham 1/2 cup grated Parmesan cheese Cook lasagna noodles according to package directions. Rinse and drain. In saucepan, melt margarine. Blend in flour, onion, garlic powder and pepper. Add chicken broth and milk. Cook and stir until bubbly. Stir in 1/2 c. of grated parmesan cheese and mushroom pieces. In 13x9" pan layer half of noodles, asparagus or broccoli, chicken or turkey and mozzarella cheese. Top with half of sauce. Add cubed cooked ham, rest of noodles, rest of sauce and second half cup of Parmasan cheese. Bake at 350 f. for 35 mins. Let stand for 10 mins. before cutting. Can be made ahead, refrigerated and bake for 45-55 mins.

Chicken & Ham Lasagna Ingredients: - 3 oven ready lasagna noodles - 2 Tbs. margarine - 1/4 c. diced onion - 1 clove minced garlic - 2 Tbsp. all purpose flour - 1/2 c. chicken broth - 1/4 c. almond milk* - 1 c. chopped fresh spinach** - 1 c. shredded non fat mozzarella cheese, divided into 3 parts - 1 c. shredded low fat parmesan cheese, divided into 3 parts - 1/2 c. fat free ricotta cheese - 1/2 tsp. dried basil - 1/2 tsp. dried oregano - 1/2 - 1 c. diced cooked chicken tenders - 1/2 c. diced, cooked ham (opt) - salt & pepper to taste - additional mozzarella & parmesan cheese & Italian flat parsley, chopped for garnish. (optional)
* can use regular milk if desired ** If using frozen spinach, thaw & dry first. DO NOT use canned spinach!! Directions: ~ Preheat lunch box ~ Line lunch box with aluminum foil & lightly spray with non stick spray. ~ place 3-4 chicken tenders directly on foil. Bake 15 min. turn over & bake an additional 15 minutes. ~ Remove chicken & dice, set aside ~ Drain & dry foil in lunch box ~ Add margarine to lunch box & let it melt. (about 5 min.) ~ add diced onion & minced garlic, cover closely with aluminum foil. Let cook approximately 10 min. ~ add flour & stir. Replace foil cover, cook 5 min, stir, cook another 5 min. ~ add chicken broth & milk. Recover, cook 5- 10 min. (until thickened) ~ add 1/3 of the mozzarella,1/3 of the parmesan, dried basil, dried oregano, salt & pepper. ~ stir until well mixed. Place sauce in a bowl & reline lunch box with new aluminum foil. ~ add chicken & ham to sauce, mix well. ~ add 1 Tbsp. sauce to center of lunch box pan. ~ place one lasagna noodle on top. Add 1/3 sauce,1/2 spinach, 1/3 mozzarella cheese & ricotta cheese. ~ add 2nd lasagna noodle, 1/3 sauce, 1/2 spinach & 1/3 mozzarella cheese. ~ add 3rd lasagna noodle, 1/3 sauce, & 1/3 parmesan cheese. ~ spray aluminum foil with non stick spray. Cover lasagna, sprayed side down, with foil. Baking: 》If baking on bottom, add 1/4-1/2 cup water to lunch box, place lasagna in water. Bake, covered, 45 min. uncover & bake another 15 min.* 》 If you have extra time, place three 1 1/2 X 2 1/4 hose clamps in bottom of lunch box. Place lasagna on top of hose clamps, bake, covered 3-4 hours. Uncover, bake an addtional 15 minutes* *If adding extra cheese & parsley add it before baking the final 15 minutes.
■ At home directions: ☆If using a casserole dish, triple the recipe, bake covered 30 minutes, uncover & bake an additional 10 minutes.

Chicken Mushroom Lasagna, breaking the rules!
Chicken Mushroom Lasagna, with a white sauce. Breaking the rules! Any chicken or lasagna lovers will love this recipe. Yes I know, I am breaking some traditional rules, but when something tastes so good, why not. This chicken mushroom lasagna recipe is made from scratch, but you can take a lot of shortcuts and still make this. You could buy ready made lasagna sheets (noodles). You could also use a kitchen food processor to chop all your vegetables and probably only have 30 minutes of preparation time. Now if you’re a passionate cook like me, then making your own pasta is absolutely worth it. I added chopped parsley to mine for extra freshness and a little more excitement than just plain pasta. (I doubled the recipe in the video as I always like to make extra for another day). I also prefer to use real chicken pieces rather than dried ground (minced) chicken. Having real chicken pieces to bite into takes it a whole new level. Slice the chicken by angling your knife blade 20 or 30 degrees, to create larger slices, but keep them as thin as you can. Make sure you caramelise the chicken (brown them) just a little on each piece for extra flavour. I find that three layers are enough, but if you have an extra deep dish, why not go another layer. Leave to rest 30 to 45 minutes before serving. This dish reheats very well in the microwave, lower the wattage and heat a little longer so it doesn’t splatter. • 12oz Oven Ready Lasagna Noodles (NO BOIL lasagna noodles) • 24 oz Mozzarella Cheese (use more or less as desired)
MEAT SAUCE • 2.5 lbs ground beef • 48 oz marinara sauce PLUS 1 cup of water (use a high quality sauce) • 1/2 diced white onion • 5 minced garlic cloves • 1 Tbsp Italian Seasoning • 1/2 Tbsp Beef Bouillon Powder • 1 Tsp dried Basil • 3/4 Tsp Cayenne Red Pepper • 1/4 Tsp ground black pepper • Salt (to taste) • Fresh Parsley • Sugar (This is not a rule! Please taste your sauce and use your best judgement if your sauce is very acidic then add sugar as needed)
CHEESE SAUCE (make to your taste) • 15 oz whole milk Ricotta Cheese • Grated Parmesan cheese • Garlic powder • Cajun seasoning (optional) • Salt • Fresh Parsley • 1 egg (add last)
NOTE: I used a 13 x 9 1/2 inch casserole dish and baked for 1 hour, broiled for 3 minutes.
When making the meat sauce please taste as you go! If you prefer NOT to use Marinara Sauce then you may use any pasta sauce (e.g. garlic and herb, tomato and basil, tomato basil garlic ) and taste as you go..... meaning gradually add seasonings to your sauce and make any adjustments as desired.
If you prefer you may brown your meat and onions, add pasta sauce, THEN gradually add seasonings! The outcome of your lasagna is based on how well your meat sauce tastes. It's important that you use a high quality sauce and season to YOUR taste for BEST results! Enjoy ????
