How To make Mediterranean Fettuccine with Shrimp and Spin
12 oz Fettuccine, uncooked
1 c Plain, non-fat yogurt
1/2 c Crumbled feta cheese
2 Garlic cloves
minced
1 tb Chopped fresh dill :
OR...
1 t -Dried dill
1/2 ts Freshly ground black pepper
12 oz Medium frozen shrimp
thawed 10 oz Frozen chopped spinach
:
thawed Salt to taste
In this dish, the shrimp and spinach are cooked with the pasta. Prepare pasta according to package directions. While the pasta is cooking, stir together the yogurt, feta cheese, garlic, dill and pepper in a large mixing bowl. Two minutes before the pasta is done, stir the shrimp and spinach into the pot with the pasta. Cook two minutes. Drain the pasta, shrimp and spinach thoroughly. Stir into the yogurt mixture and season to taste with salt. Serve immediately. Each serving provides: 537 Calories; 43 g Protein; 67 g Carbohydrates; 11 g Fat; 299 mg Cholesterol; 641 mg Sodium. 1pack Eden Cheese(200g) or Cheddar cheese
3 tablespoons extra virgin olive oil
a knob of unsalted butter

1 medium onions, chopped

1 tsp Hungarian paprika
1 tsp black pepper
salt to taste
200ml cooking cream (full fat)
chopped parsley for toppings

Creamy shrimp pasta with sun-dried tomatoes is a delicious, quick and easy meal that takes just 20 minutes to prep and make. Spaghetti noodles are tossed in a thick and creamy sauce packed with shrimp and sun-dried tomatoes. It's rich, silky, and so so good. Seafood pasta has seriously never tasted so good. EASY TUSCAN SHRIMP PASTA
Ingredients:
Season the shrimp:
1lb large or jumbo shrimp
1 tbsp olive oil
1 1/2 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika

1 - 2 tbsps olive oil for cooking shrimp

Boil Pasta:
3 cups dry Farfalle (bowtie pasta)
Water
Salt
.
.
.
Make the Sauce:
2 tbsps unsalted butter
1 small onion, diced
4 cloves garlic, finely minced
1/4 - 1/2 tsp Paprika
Onion powder to taste
Garlic powder to taste
1 1/2 tsp Minced Fresh Thyme
1 1/2 tsp minced fresh basil
1/4 cup Sundried tomato in oil (drained and pat dried)
1/4 cup Chicken or Veg. broth
1 1/2 cup Whipping cream
1 1/2 - 2 cups Grated Parmesan Cheese
Salt and pepper to taste
2 cups spinach
I added more drained sundried tomato near serving time for a pop of colour
Garnish with chopped fresh basil and or parsley
NOTES:
If using the sundried tomato not in oil, you'll need to soak a bit to get rid of excess salt
