SIMPLE Mediterranean White Bean Soup

???? SOUP INGREDIENTS
1 tablespoon olive oil
1 large onion chopped
2 garlic cloves minced
1 large carrot chopped
1 celery rib chopped
6 cups vegetable broth
1 teaspoon dried thyme
½ teaspoon oregano
1 teaspoon kosher salt
½ teaspoon black pepper
3 15-ounces canned white beans drained and rinsed
2 cups baby spinach
Fresh parsley for serving
Grated parmesan cheese for serving
INSTRUCTIONS
1. In a large pot or saucepan, heat olive over medium high heat. Add onions and garlic; cook until onions are translucent, and garlic is fragrant, about 2-3 minutes, while stirring regularly. Add in the carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
2. Add vegetable broth and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavors together.
3. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes
4. Remove from heat, sprinkle fresh parsley and grated parmesan cheese, if desired, and serve immediately.

INGREDIENTS WITH GRAM AMOUNTS
1/4 cup (54 grams) extra virgin olive oil - plus more for finishing
1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)
salt and pepper to taste

Navy Bean Soup
1 lb of navy beans
2 Large Carrots
2 Large Stalks
1 Large onion
3 garlic cloves
1 bay leave
14 tsp thyme
1 chicken stock cube
1 32 oz of chicken broth
2 TBS butter
I used a preslices Ham and cut it int cubes. Use any meat like a sausage even chicken will work.
Pepper to taste
Salt to taste
red pepper/Cheyenne optional
This goes great with all types of bread. My favorite is a biscuit to get at those juices.
Cook until beans are tender.

15 bean soup is good. We all are familiar with the package with the ham flavoring. But what you really need in your life, is this 16 bean soup you flavor yourself! This soup is easily vegetarian by simply omitting the sausage. Either way, this soup is delicious and perfect for a snowy day/evening!! The Instant Pot makes it so you don't have to soak or boil the beans first-its incredibly easy to get delicious tender beans!
1 bag HamBeens® 15 BEAN SOUP® or La Preferida 16 Bean soup (what I use)
1 package Smoked Turkey Sausage (can use regular smoked sausage or ham)
8 cups vegetable stock or water, or 1/2 and 1/2
2-3 cloves garlic, chopped
1 small yellow onion, chopped
1 red bell pepper, seeded and chopped
2 stalks celery with tops, chopped
2 carrots, peeled and chopped
Salt and pepper to taste
1/4 tsp Red Pepper flakes or to taste
1 dried bay leaf
1 tsp dried Thyme
AFTER 45 MINUTES PRESSURE, ADD:
1 14.5 oz can petite diced tomatoes, undrained
juice of 1 large lemon, about 2/3 cup
1 TB extra virgin Olive Oil, if desired
