Tangy Sweet Chipotle Meatballs
You can make these sweet and tangy meat balls easily with this recipe.
2 pounds ground beef
2 eggs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon chipotle powder
2/3 cup bread crumbs
1/2 can jelled cranberry sauce
8 ounces chili sauce
1 tablespoon Tobasco Brand Chipotle sauce
Preheat oven to 350 degrees. Mix together in a medium sized bowl ground meat, eggs, salt, pepper, smoked paprika, chipotle powder. When meat mixture is well combined prepare meatballs by rolling about 1 tablespoon into a small ball. Place on a wire wrack on a cookie sheet. When all meatballs are rolled into small balls cook for approximately 20 to 25 minutes. Place cranberry sauce, chili sauce, and Tobasco chipotle sauce into a crock pot. Turn the crock pot to low heat. Stir to combine. Add cooked meat balls and cook until they are warmed through.

Liven up your basic meatball appetizer recipe by adding the simple, but versatile, fresh mango. These Chipotle Mango Meatballs are truly spectacular!
RASPBERRY CHIPOTLE MEATBALLS // COOKING W/ LIZZIE
-Ingredients:
For the meatballs
-1 pound of ground meat
-1 1/2 cups of chopped or grated veggies (carrots, bell peppers, spinach and zucchini are great options)
-2-4 garlic cloves, minced
-3 tablespoons fresh herbs (used parsley and thyme)
-lemon zest
-heavy pinch of salt
-black pepper
-½ teaspoon Spiceology Raspberry Chipotle
-2 teaspoons dried basil
-drizzle of olive oil (can be swapped for an egg and breadcrumbs)
For the sauce
-1 can coconut milk (13.5 oz)
-1 teaspoon Spiceology Raspberry Chipotle
-1/2 tablespoon ground mustard
-1 cup vegetable broth
-pinch of salt
-pinch of pepper
-2 teaspoons fresh thyme
-Lemon zest
-juice of half a lemon
-½ teaspoon paprika
-1/2 tablespoon dried basil
-Cornstarch
Serve with carbs of your choice: rice, mashed potatoes, cauliflower rice, orzo, or couscous.
Instructions:
1. Mix together your ground meat of choice, the chopped veggies, garlic, herbs, spices, lemon zest and oil until combined. Try not to over mix.
2. Form into 2 inch round balls and set aside
3. Heat 1-2 tablespoons of oil in a pan over medium-high heat, arrange meatballs in a pan so they have plenty of room and let them sit undisturbed for 2-3 minutes then flip.
4. After you've got some good color on your meatball, reduce the heat and let them finish cooking.
5. Once meatballs have been cooked through, remove from the pan.
6. In the same pan (!!important!! Don't lose all the flavor you've got in there) You're going to start building your sauce. Deglaze your pan by pouring in our vegetable broth and scrap any brown bits from the bottom of the pan, bring to simmer
7. Add fresh thyme, Lemon zest, lemon juice, coconut milk, raspberry chipotle, ground mustard, dried basil, and paprika. Combine well and keep at a simmer
8. If you want a thicker sauce, you can add a slurry to it made up of corn starch and warm water. The longer it sits, the thicker it will become.
9. Then layer your preferred carbs, meatballs, and sauce. Top with fresh herbs and fresh lemon!

Meatballs In Chipotle Sauce
Ingredients:
● 2 lb ground beef
● 1 egg
● 12 mint leaves
● 1 tbsp salt
● 1 tbsp black pepper
● 1 jar LA COSTEÑA DICED CHIPOTLE PEPPERS (4 tsp)
● ¼ cup rice
● 1 cup water
● 1 tsp chicken broth powder
● 1 tsp salt
● 1 garlic clove
● 2 tomatoes
● 1 can LA COSTEÑA CHIPOTLE PEPPERS IN ADOBO SAUCE ( 5 chipotle peppers)
Directions: In a pot over medium high heat add ¼ cup rice and 1 cup of water. It’s very
important to not over cook rice. Only cook for 5 minutes or less. When you start to see
white bubbles remove from heat and let it sit for 5 minutes. In a bowl place the meat and
add egg, mint leaves, salt, black pepper, rice, and 4 tsp of LA COSTEÑA DICED
CHIPOTLE PEPPERS. Mix everything together. Form meat into 2 inch meatballs. In a
blender add tomatoes, garlic, salt, chicken broth powder, and LA COSTEÑA CHIPOTLE
PEPPERS IN ADOBO SAUCE. Blend until smooth. In a deep pan over medium high
heat add about 1 tbsp of oil and when oil gets hot add the sauce. When sauce starts to
boil add meatballs. Cook over medium low heat for 15-20 minutes. Serve and
complement with white rice. ENJOY!
