How To make Cornish Hens with Creamy Chipotle Sauce
4 each Cornish game hens -- about 1 1/4 pounds
2 1/2 cups Roasted Tomatillo-Chipotle Salsa
separate recipe
1 pound green beans :
trimmed
1 large white onions -- sliced 3/8" thick
1/2 cup heavy cream
1 tablespoon vegetable or olive oil
salt, preferably coarse
Rinse the hens and pat dry. Set them in a bowl and coat with the Roasted Tomatillo-Chipotle Salsa. Cover and let stand at room temperature for 1 hour.
In a large pot of boiling salted water, cook the green beans and onion slices until both are crisp-tender, about 4 minutes. Drain and spread out on a tray to cool.
Preheat oven to 450-degrees. Scrape the marinade from the hens back into the bowl and stir in the cream. Set the hens, breast side up, in a large oiled roasting pan with the legs facing out. Brush hens with the oil, season with salt and roast in the middle of the oven for 15 minutes. Arrange the beans and onions around the hens, pour the marinade over and roast for about 20 minutes longer, or until the thigh juices run clear when pierced.
Transfer the hens and vegetables to a serving platter and cover loosely with foil. Spoon off any fat from the pan sauce. Set the roasting pan over 2 burners on moderate heat and boil, scraping up any browned bits, for 1 minute. Season with salt. Spoon half of the sauce around the hens and serve with the remaining sauce.

The Cornish hen were brined for 6 hours in the Sage-lemon brine we made the earlier in the day. Then we rinsed, dried them and let the chickens rest in the fridge overnight. The next day we added a dry rub to the hens and let them come up to room temperature. We fired up the grill and let it get to 450 degrees before baking the Cornish hens for 45 minutes or 165 degrees. Then we let them rest for 10 minutes! We added a Watermelon Arugula Spinach and Feta Cheese salad! Enjoy!

Jerk-Lime Cornish Game Hens
Jerk Marinade Recipe Ingredients for two split Cornish game hens:
Add the juice from 2 juicy limes to tht rest of the ingredients and toss in the limes after squeezing out the juice.
Equal parts of each ingredient approximately 1/4 cup of each:
Kikkoman Soy Sauce
Kikkoman Lime Ponzu Sauce
Worcestershire Sauce
Mojo (I used Chipotle for the extra heat)
Jerk Seasoning - I used Walkerswood Jamaican Jerk seasoning. It looks exactly like chewed up grass in a jar. Get it at any Caribbean market or international market.
Add enough pineapple juice to completely cover the two split hens. But reserve 1/2 cup of marinade to add to the chicken when it goes in the oven
Marinate in the refrigerator overnight (12 to 24 hours).
Cooking Instructions
Heat oven to 375 degrees F
Remove the four lime halves and place each half of the hen bone side down over the lime half. Repeat this for each half hen.
Place the hens in the 350 degree F oven (top shelf) for approx. 15-20 minutes or until very golden brown. Watch closely because the browning will progress quickly once it starts.
After the hens have browned, add the reserved marinade to the pan with the hens.
Reduce the oven temperature to 350 degrees F Cover the hens loosely with a sheet of foil after they are brown to prevent burning.
Cook for another 30 minutes or until the chicken leg moves and/or comes away from the breast quarter.
Total cooking time should not exceed 55 minutes or the chicken will be dry.
The hens will be spicy! For less heat, use less jerk seasoning. But heat is good and what's the point of jerk not being spicy?
Bottom line, enjoy the heat!
