How To make Albondigas En Salsa Chipotle [Meatballs In Chipotle Sauce]
MEATBALLS:
1/2 lb Beef, ground finely
1/2 lb Pork, ground finely
1/3 c Onions, finely chopped
2 tb Flour
1 tb Cilantro, fresh minced
1/2 ts Oregano, dried
1/4 ts Cumin, ground
1 Egg, beaten
3 tb Vegatable oil
SAUCE:
1 tb Vegatable oil
1 Onion, chopped
2 Garlic cloves, chopped
1 c Tomato sauce
2 Chipotles, canned in adobo
-sauce, stemmed and chopped 2 tb Adobo sauce (from chiles)
1/2 c Beef broth
TORTILLA CUPS:
6 Flour tortillas (6 inch)
Vegatable oil for frying Chopped lettuce MEATBALLS: Combine all the meatball ingredients, except the oil, and mix well. Form into 1 1/2-inch balls. Brown the meatballs in the oil, remove, and keep warm. SAUCE: To make the sauce, add the oil to the pan and saute the onion and garlic until soft. Add the remaining sauce ingredients, bring to a boil, reduce the heat, and simmer for 15 to 20 minutes until the sauce is thickened. Place the sauce in a blender or food processor and puree until smooth. Return the sauce to the pan, add the meatballs, and heat through. TORTILLA CUPS: To make the tortilla cups, pour the oil to a depth of 3 inches and heat to 375 degrees. Place a tortilla in the oil and let it float for a couple of seconds. Press the center into the oil with a can or ladle to form a bowl and fry until crisp, remove, and drain. To serve, place the lettuce in each of the tortilla cups, top with the albondigas, and serve.

INGREDIENTES
ALBONDIGAS: ½ kg carne de res + ¼ kg carne puerco molidas, ½ bolillo + ⅓ tza leche, 1 huevo batido, huevo duro, 1 diente ajo, ⅛ cebolla, ¾ cdta sal, 4 pimientas negras, 1 pimienta gorda, pizca de comino
SALSA: ¾ kg jitomate, ½ cebolla chica, 3 tza caldo pollo, chiles: 4-6 chipotle + 4 guajillo, 3 dientes ajo, 1 cdta sal, 1½ cda masa

In a big pot add water half way but it to boil (med/high) add 2 table spoons of Knorr de pollo and ½ spoon of garlic salt and tomato sauce let it boil for about 5 minutes add carrots, potatoes and ½ of onion let it boil until tender. Mix carne molida add 1 egg and some seasoning of your liking (seasoned salt, lemon pepper, orange pepper) just a little bit so that the meat has flavor add some rice ½ a cup mix mix until it's all blended together start rolling those albóndigas. Once carrots and potatoes are ready taste the flavor you will know if it's perfect or it needs more Knorr de pollo (if it does don't add tooo much maybe just ½ a spoon) once it's tasty add chipotle you can either blend it or throw in a whole pepper in the boiling pot (depending how spicy you want it) add meet let the balls cook for about 10 minutes. Add cilantro and cabbage and calabaza let it sit on the fire for another 10 minutes or sooo until soft or your liking of texture! AND BOOMS you have ALBÓNDIGAS ❤

Meatballs In Chipotle Sauce
Ingredients:
● 2 lb ground beef
● 1 egg
● 12 mint leaves
● 1 tbsp salt
● 1 tbsp black pepper
● 1 jar LA COSTEÑA DICED CHIPOTLE PEPPERS (4 tsp)
● ¼ cup rice
● 1 cup water
● 1 tsp chicken broth powder
● 1 tsp salt
● 1 garlic clove
● 2 tomatoes
● 1 can LA COSTEÑA CHIPOTLE PEPPERS IN ADOBO SAUCE ( 5 chipotle peppers)
Directions: In a pot over medium high heat add ¼ cup rice and 1 cup of water. It’s very
important to not over cook rice. Only cook for 5 minutes or less. When you start to see
white bubbles remove from heat and let it sit for 5 minutes. In a bowl place the meat and
add egg, mint leaves, salt, black pepper, rice, and 4 tsp of LA COSTEÑA DICED
CHIPOTLE PEPPERS. Mix everything together. Form meat into 2 inch meatballs. In a
blender add tomatoes, garlic, salt, chicken broth powder, and LA COSTEÑA CHIPOTLE
PEPPERS IN ADOBO SAUCE. Blend until smooth. In a deep pan over medium high
heat add about 1 tbsp of oil and when oil gets hot add the sauce. When sauce starts to
boil add meatballs. Cook over medium low heat for 15-20 minutes. Serve and
complement with white rice. ENJOY!
