How To make Marbleized Mint Bark
1/3 c Mint or regular choc. chips
1 lb "white" chocolate pieces
3/4 c Crushed candy canes
Line a baking sheet with foil; set aside. In a small saucepan heat mint or regular chocolate chips over low heat, stirring constantly, til melted and smooth. Remove pan from heat. In a 2-quart saucepan heat the white chocolate over low heat, stirring constantly, till melted and smooth. Remove pan from heat. Stir in crushed candy canes. Pour the melted white chocolate mixture onto the prepared baking sheet. Spread white chocolate mixture to about 3/8" thickness; drizzle with the melted chocolate chips. Gently zigzag a narrow metal spatula through the chocolate and peppermint layers to create a swirled effect. Let candy stand several hours or till firm (OR chill about 30 minutes or till firm). Use foil to lift firm candy from the baking sheet; carefully break candy into pieces. Store, tightly covered, for up to 2 weeks. Makes about 1 1/4 pounds. Per 2-ounce serving- 316 calories (41% from fat), 15 g fat, 0 mg colesterol, 0 g protein, 48 g carbohydrate, 4 mg sodium. From "Better Homes and Gardens" magazine, Dec. 1991.

After Eight Mint Chocolate Bark
Mint chocolate is perfect this time of year. This tasty treat is super quick to make and great to bring along to your festive family gatherings!
Ingredients;
300g dark chocolate
300g white chocolate
50g green candy melts (or you can use green powder food colouring)
a box of After Eight chocolates
Peppermint flavouring (It's best to use peppermint oil but if you can't get hold of any, a drop of oil in with your mint extract will stop the chocolate from seizing.)
Green sprinkles (optional)
Method;
Line a shallow tin with greaseproof paper. I've used a 14 x 10
Melt dark chocolate, add a teaspoon of flavouring and pour into your lined tin.
Spread the chocolate around so it's a nice, thin layer.
Pop this in the freezer for 10 minutes.
While your chocolate is chilling, chop up some After Eight chocolates.
Melt white chocolate and green melts together then add a teaspoon of flavouring.
Pour this over the frozen dark chocolate and spread nicely.
Decorate with chopped pieces of After Eight and sprinkles.
Pop in the fridge for a few hours then cut up and serve!
Things to remember;
Wait until your dark chocolate has set before pouring over your white and green.
If using an alcohol based peppermint flavouring/extract, make sure to ass a teaspoon of oil into your melted chocolate to stop it seizing.
If you aren't using candy melts to colour your white chocolate, use a powder based food colour.
These will last weeks in the fridge so you can make them well in advance of your event.

This sweet peppermint fudge recipe is the perfect gift to give this holiday season.
Ingredients:
--1/4 cup softened butter
-- 4 cup mini marshmallows
-- 1 cup heavy cream
-- 2 cup sugar
-- 1/8 tsp salt
-- 3 cup white chocolate chips
-- 1 tsp peppermint extract (or vanilla extract)
-- Colored sprinkles
-- red food coloring
Directions
-- Line a 9-by-13-inch pan with foil.
-- In a saucepan, simmer butter, marshmallows, heavy cream, sugar, and salt. When smooth, stir in white chocolate chips and peppermint extract. Blend well.
-- Spread in pan. Coat with colored sprinkles. Cool; cut into squares (if you like, cut squares in half to make triangles). As a variation, substitute vanilla for peppermint extract.
-- use a dropper to add red food coloring and use a pointed tool to create swirls.
