How To make Macaroon Jam Slices
1 1/2 c Ground walnuts
2/3 c Sugar
1 Egg white; slightly beaten
1 Egg white; slightly beaten
12 oz Apricot jam
(or raspberry jam Preheat oven to 350. With a pastry brush or paper towel, lightly butter a 14-by-17-inch baking sheet. Sprinkle some flour over it, tip the sheet from side to side to cover the surface evenly, then knock off the excess by inverting the sheet and striking it against the edge of a table. In a large mixing bowl, combine the ground walnuts and sugar. Add half slightly beaten white of 1 egg white, and stir until the mixture forma a paste thick enough to be kneaded with the hand. Add a little of the 2nd egg white if the mixture seems too dry. Shape the paste into roll about 3/4-inch in diameter and 10-inches long. With the index finger make a
channel about 1/2-inch at each end of the roll. Lift the rolls with a large metal spatula, and place them, several inches apart, on the baking sheet. Bake them in the middle of the oven for 15 or 20 minutes, or until they are lightly browned. Meanwhile, heat the jam in a saucepan until it runs easily off the spoon. Remove the rolls from the oven and fill the channels with the hot jam. Let them cool. To serve, cut the rolls into slices 3/4-inch thick. -----

Raspberry Coconut Macaroons - Valentines Day - Episode 154 - Baking with Eda
Full recipe:
Ingredients
makes 12
100 gr coconut
2 egg whites
pinch salt
75 gr granulated sugar
1 tsp vanilla extract
50 gr old-fashioned rolled oats
100 gr raspberries, frozen
Instructions
1. Preheat your oven to 170 C - 340 F and line a baking sheet with parchment paper.
2.In a medium bowl, stir together coconut, egg whites, pinch salt, sugar, vanilla extract and oats. Add frozen raspberries and stir until well combined.
3. Using a ice cream scoop or small spoon, scoop the dough onto the prepared baking sheet. No need to leave much room in between as they do not spread out.
4. Bake in preheated oven until golden brown for about 20 to 25 minutes. Remove from oven. The macaroons will be very soft at this point. Allow the macaroons to sit at room temperature on baking sheet for about 10 minutes to cool down.

Making the macaroon Paste Recipe Ingredients:
Granulated sugar 451g
Ground almonds 225g
Ground rice 28g
Egg whites 155g
First put all the dry Ingredients into a clean grease free mixing bowl, mix round with beater 1st speed for 1 min adding in the egg whites now scrape down, Now start mixing on 2nd speed for 1 mins, Now mix for 4 min on 3rd speed, Now ready you can put the macaroon paste into a bowl and cover it. you can use right away if you want to. Now if you store it you will need to return the paste to the mixer and mix for 1 min on 3 speed now it's ready
