How To make Macaroni and Vegetables with Cheese Sauce
1 t Margarine
1 Garlic clove, minced
1/2 c Low fat milk (1%)
2 t All-purpose flour
1/4 t Salt
2 1/2 oz Red-fat Cheddar cheese,
Shredded and divided 1/2 t Worcestershire sauce
3/4 c Cooked elbow macaroni
1/2 c Cooked broccoli florets
1/2 c Cooked cauliflower florets
In 1-quart microwavable casserole, combine margarine and garlic; microwave on HIGH for 30 seconds, until margarine is melted. In 1-cup liquid measure, combine milk, flour and salt, stirring to disolve flour. Using a wire wisk, stir into margarine-garlic mixture. Cover and microwave on HIGH for 1 minute. Stir in 2 oz cheese and the Worcestershire sauce. Microwave on HIGH for 2 minutes, utnil mixture thickens. Add macaroni, broccoli, and cauliflower to cheese sauce and stir to coat. Microwave on Medium-High (70%) for 2 minutes, until thoroughly heated. Top with remaining cheese. Microwave on HIGH for 30 seconds, until cheese is melted. Per serving: 1/2 Milk, 1 Fat, 3 Proteins, 2 Vegetables, 1 1/2 breads, 20 Optional Calories 496 calories, 17g fat

Ingredients:
Cheese Macaroni
Water - 4-5 cups
Salt
Macaroni - 1½ Cups
Oil - 2 tbsp
Cumin Seeds - 1 Tsp
Garlic - ½ Tsp or less (Optional, Chopped)
Green Chili - ½ Tsp (Chopped)
Onions - 1
Salt - To Taste
Pizza herbs/mix herbs
Black Pepper - ½ Tsp (Optional)
Mix Veggies - ¼ Cup (Carrots, Cauliflower, Beans - Chopped)
Red Chili Sauce - 1 Tbsp (Optional)
Tomatoes - 3 (Med Size - Chopped)
Ketchup - 3-4 Tbsp (Or more)
Coriander - 2 tbsp (Chopped)
Cheese - 2-3 cubes
Water
Coriander / spring onion
Kitchen Products I use:
Measuring Cup & Spoon Set -

Instant Yeast - (500gms, keep frozen in airtight container, will stay good for years)
Instant Yeast - (small pack)
Pizza Screen - (3 pack - 6,7,8 inches)
Parchment Paper - much better than butter paper, and it is reusable -
Good NonStick Pan -
Whipping Cream -
Oven For Baking - (28liter is good enough)
Microwave - (not good)

IMPORTANT NOTES:
- Do not heat the sauce separately before adding to pasta, this can cause it to separate. For best results, strain the cooked pasta, let sit for 2-3 minutes (so it isn't extremely hot when adding to the sauce), then add the desired amount of sauce to the warm pasta.
- The sauce will thicken up in the fridge, but when you add to warm pasta it will melt and combine easily (similar to those sauces that come with Velveeta Shells and Cheese).
- IF the sauce separates when you add to the pasta, remove from heat and let it sit for ~5 minutes. Then, stir the pasta continually and the sauce will re-constitute. The separating issue typically is caused by excess heat but is resolved once it cools down a bit and is stirred.

450g 2% Cottage Cheese (one entire 16oz container)
80g 2% cheddar (or cheddar of choice)
20g Parmigianno Reggiano
30g Cheddar Powder (buy in bulk on Amazon or use packets found in boxed Mac n Cheese)
150g 1% milk
Salt/Pepper to taste
Per Serving* (makes 4)
210 Cals
25g Protein
9g Carbs
10g Fat
*A serving makes enough for 4oz of pasta. The entire recipe makes enough for 1 pound of pasta.
