How To make Lydia's Mexican Casserole
12 ea 6-inch corn tortillas
1 md Onion, chopped
2 c Diced tomatoes
2 c Tomato salsa
Ground cumin r 1 Jalapeno chili
3 Cloves garlic, minced
1 cn 27-ounce whole green chilies
12 oz Firm tofu, mashed
32 oz Non-fat yogurt
1 tb Dry no-oil vinaigrette
-salad dressing Freshly chopped cilantro Preheat oven to 350 [degrees] F. Using nonstick baking dish, line casserole with six tortillas. Mix together onion, tomatoes, salsa, 1 teaspoon cumin, chopped red chili pepper, and garlic. Pour about three- fourths of mixture into casserole. Lay green chili peppers flat over this, then mashed tofu. Cover with remainder of tortillas. Add remaining chopped tomato and salsa mixture. Mix yogurt with dry salad dressing mix and pour over chopped tomato and salsa. Sprinkle a little ground cumin over this and bake for 35-45 minutes. Garnish with cilantro. Variation: Substitute cooked beans for the tofu.

Ingredients:
1 1/2 lbs ground beef
1 1/2 packets of taco seasoning
8 oz cheddar cheese
8 oz mozzarella cheese
18 count package corn tortillas
Sauce:
3 tablespoons flour
3 tablespoons oil
3 tablespoons chili powder
1 teaspoon cumin powder
1 heaping tablespoon chicken bouillon
4 cups water
1 tablespoon of the taco seasoning

These potatoes are such a nice switch up from mashed potatoes and I love that I can set them in the oven and forget them for a while. Full of flavour and they pair so well with so many dishes, including this sweet and sour chicken. Two simple recipes that are 5 ingredients or less, bake for about the same amount of time, bake at the same temperature and are minimal effort to get into the oven, especially if you're using frozen hashbrowns from the store.
SNS Chicken
Chicken breasts (My package had 8 small breasts)
1/4 cup/1 package onion soup base
1/4 cup brown sugar
1/2 cup ketchup
1/4 cup water
Place chicken breasts on a single layer in an oven safe dish. Whisk together the onion soup base, brown sugar, ketchup and water. Pour over the chicken. Cover with aluminum foil. Bake at 350 degrees Fahrenheit for 1 1/2 hours.
Hashbrown Casserole
1 - 2 lb bag frozen hashbrowns OR about 5 medium to large potatoes, cubed
1 small/500 ml container sour cream
1 can cream of chicken OR mushroom soup
salt and pepper to taste, about 1 tsp salt and 1/2 tsp pepper
1 - 2 cups shredded cheese, any kind (mozzarella, marble, cheddar)
onion, optional
1/4 cup butter
1 cup corn or bran flakes, crushed to your desired size
Mix first 6-7 ingredients. Spread into oven safe dish. Melt butter, add flakes then spread over potato mixture. Bake at 350 degrees Fahrenheit for about 1 1/2 hours.
Equipment: mixing bowls, spoons, scraper, whisk, casserole dishes, measuring cup, cheese grater, aluminum foil.

Tater Tot Casserole
Super handy recipe, easy to whip up and assemble. It can be served with caesar salad and garlic bread if desired. I love the flexibility of this recipe.
Recipe:
1 1/2 lbs ground beef
1 onion, small - medium
2 cups of corn (or veggie of your choice; amount is a guideline)
1 (10oz) can cream of chicken soup (cream of mushroom works too)
Seasoning salt, to taste
2 -3 cups Shredded cheese or cheese slices - real or processed
1 pkg tater tots (or potatoes - 1 inch cubes)
Brown beef and onion; drain if needed. Mix beef, corn and soup. Spread in a 9 x 13 inch casserole dish. Sprinkle with seasoning salt. Arrange Tater Tots on top. Bake at 350 degrees F for 1 1/2 hours.
Equipment: pot, wooden spoon, scraper, casserole dish, can opener, cheese grater.
