Organic Oatmeal Apple Cinnamon Cookies (Softest Breakfast Cookie Ever!) ???? Easy Vegan Cookie Recipe
Sometimes you wake up and just want food to be ready to eat.
➡️ It’s tempting to resort to starchy, sugary sweets with empty calories.
But, today I have a sweet, yet low glycemic index and high fiber classic: Organic oatmeal and apple cinnamon cookies!
Healthy rolled oats, walnuts, raisins, almond butter, apples, and more are blended together to make a healthy, satisfying snack you can enjoy all week!

FYI - The following is a rough draft of the video I will be posting on August 2nd.
▶️ INGREDIENT LIST: (12 cookies)
175g Old fashioned rolled oats - 1 + 3/4 cup (Both Regular Rolled Oats and Gluten-free Oats work well)
47g Coconut sugar - 1/4 cup or to taste (OR Palm sugar)
100g Walnuts - 1 cup
70g Raisins - 1/2 cup
125g Smooth Almond butter - 1/2 cup OR Nut butter of choice
1 medium Apple (170g approx.) - chopped
1/4 Teaspoon salt (I have used Pink Himalayan salt)
1/4 Teaspoon baking soda
1 Teaspoon baking powder
1 Teaspoon cinnamon
1 Teaspoon vanilla extract
▶️ METHOD:
Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good.
Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness.
Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly.
Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out.
These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast.
▶️ IMPORTANT TIPS:
- the mixture is suppose to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness
- the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement
- some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you wont notice it at all
- the cookies are very delicate right after its baked so let it cool down completely before handling or storing it
- Store the cookies in an air tight container to prevent it from drying out
- these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

Make these low calorie oatmeal cookies without oil and butter and satisfy that cookie craving!
Each cookie has about 15 calories only.
???? Ingredients
Oat cereal: 3 tablespoons
Sweetener: 1 tablespoon
Brown sugar(optional): 1 teaspoon
Vanilla essence
Baking soda: 1/4 teaspoon
Beaten egg: 2 tablespoons
You can add some chopped nuts on prior to baking them.

Ingredients
* 2 1/2 cups (231 g) rolled oats (or quick oats)
* 1/2 cup + 2 tbsp (100 g) water
* 2 1/2 tbsp (52 g) maple syrup
* 2 1/2 tablespoons (33 g) extra virgin olive oil
* 2 teaspoons vanilla
* 1/4 teaspoon salt
Instructions
* Preheat the oven to 350°F (180°C).
* Place the rolled oat in a blender or food processor and blend until you get a coarse! flour.
* Mix the oatmeal, vanilla, and salt in a bowl, and add the extra virgin olive oil.
* Bring the water with maple syrup to the boil and pour it into the bowl. Mix with a spoon and let it cool slightly.
* Then use your hands to form a dough. Feel free to add a bit more water if the dough feels too crumbly. Just add it a tablespoon at the time.
* Roll out the dough until very thin (3mm) and cut in circles with a round cookie cutter. If the dough is a bit sticky, I normally roll it out on a baking sheet, to avoid using additional flour.If the dough is too crumbly, don't add too much water. Simply roll out a quarter of the dough at a time.
* Place the circles on a flat tray covered with a baking sheet, no extra grease required.
* Bake until golden brown, for 15-20 minutes. If your oven doesn't cook evenly, make sure to turn the trays half-way through baking. Keep a close eye on the oatcakes in the last 5-8 minutes, to avoid overcooking them.
* When the oatcakes are ready, remove from the oven and allow to cool on a wire rack.
* Keep in the jar.

OATMEAL COOKIE RECIPE
(Makes 11 cookies)
Ingredients:
1 1/2 cups rolled oats (135g)
1/2 cup ground oats or oat flour (50g)
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/2 cup unsweetened applesauce (125g)
1/4 cup maple syrup, honey or agave (60ml)
1/2 cup dark chocolate chips (80g)
NUTRITIONAL INFO (per cookie):
108 calories, fat 2.5g, carb 20.3g, protein 2.4g
Preparation:
In a bowl, combine the dry ingredients, rolled oats, ground oats, baking powder, ground cinnamon and salt.
In another bowl, add the applesauce and sweetener of your choice (maple syrup, honey or agave). Whisk well until combined.
Pour the wet ingredients over the dry ingredients and stir together until the sticky dough if formed.
Mix in the dark chocolate chips.
Let the dough chill in the fridge for 20-30 minutes.
Line your cookie sheet with parchment paper. Using an ice cream scoop or 1/4 cup measure, scoop the cookie dough onto the baking sheet.
Flatten a cookies to about 1/2 inch thick.
Bake at 350F (180C) degrees for 12-14 minutes.
Let it cool for 5 minutes in a baking pan, then transfer to a wire rack to cool completely.

Low Fat Oatmeal Chocolate Chip Cookies

I've always been a sucker for desserts but lately I've been trying to eat healthier! So I found this recipe on skinnytaste and decided to give it a try. I thought that since it's a healthy recipe, it wouldn't taste as good. However, if I must say, it's actually better than most high calorie oatmeal cookies! These are so delicious and absolutely worth a try.

Here's a quick summary of the ingredients:
1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
2 tbsp unsalted butter, room temperature
1/2 cup sugar
1/2 cup unpacked brown sugar
1 large egg
1/4 cup unsweetened apple sauce
1/2 tsp vanilla extract
2 cups quick oats
3/4 cup dark chocolate chips
*I suggest baking the cookies for only 8 minutes! This way, the cookies will come out soft and moist, not hard and dry. It's always better for them to be undercooked than over cooked, that way if it's under cooked you just need to pop them in the oven for a couple of minutes and your problem will be solved!

These cookies are pretty amazing because they have absolutely no butter or margarine I love cookies and now, I have the perfect cookie recipe that will help you lose weight faster.
And … it gets better because I’m about to tell you that no baking is required and all you need are 3 simple ingredients. Winning!
to get started, grab a bowl and add the following ingredients
INGREDIENTS:
2 bananas, mashed 1 or 2
1 cup quick oats 90gr
⅓ cup raisins, or walnut, or almond, or 1tsb peanut butter
Preheat your oven to 350F.
In a large bowl, add 2 bananas and mash it.
Add quick oats to the mashed bananas.
Then add one of the above 4 ingredients to the mixture. You can also add some cinnamon for that extra flavor.
Scoop the cookie dough into your silicone mat or parchment paper.
Bake for about 15 minutes until they're done.
