How To make Low Fat Chimichangas
Ingredients

black beans, can, rinsed, drained
8
oz
tomatoes, can, stewed
2-3
teaspoon
chili powder
1
teaspoon
oregano, dried or italian herbs

corn tortillas, 6 inch
1
cup
green onions, finely chopped, including tops
1 1/2
cup
jarlsberg cheese, lite, shredded
Directions:
Mix beans, tomatoes, chili powder and oregano in saucepan. Cover and simmer 5 minutes. Uncover and simmer, stirring and crushing some of the beans against side of pot, 5 minutes longer. Set aside. Warm tortillas per package directions and keep warm under a hot, damp cloth. Place 1 tablespoon of bean mixture on center of each tortilla. Sprinkle with a rounded teaspoon of onion, then a tablespoon of cheese. Fold opposite sides of tortillas on top of mixture twice, forming square packets. Place fold sides down on nonstick pan. Repeat until all ingredients are used. Cook over low heat, covered, 3 to 5 minutes until heated through and bottoms are crispy.
Serve at once or keep warm on a covered warming tray.
Yield: Makes 6 to 8 servings (22 to 24 pieces).

STOVETOP INSTRUCTIONS:
IN A MEDIUM POT FILL IT UP HALF WAY ABOUT 3 QT WITH WATER, (HIGH HEAT) ADD SALT I USED 2 TBSP 1/2 ONION, GARLIC AND BAY LEAVES ALLOW IT TO COME TO BOIL ONCE IT BOILS ADD THE MEAT AND ALLOW IT TO COME TO A BOIL AGAIN. ONCE IT COMES TO BOIL AGAIN SKIM OFF THE TOP OF THE BROTH, REDUCE HEAT TO MEDIUM AND COVER, COOK FOR 2-3 HOURSW OR UNTIL THE MEAT IS NICE AND TENDER. ONCE MEAT IS DONE SHRED IT YOU WILL ADD ALL THE SEASONINGS WHILE COOKING IT WITH THE REST OF THE VEGETABLES ????

3 lbs chuck roast
large flour tortillas
chipotle peppers in adobo sauce
3 potatoes
1 large white onion
4 tomatoes
garlic
5 Anaheim peppers
2 tsp ground cumin
2 tsp smoked chipotle
2 tsp New Mexico pepper
1 tsp chile flakes
1 tsp coriander
2 tbsp oregano
2 tbsp black pepper
salt I used 2 tbsp
