How To make Chimichangas
3 c Chopped chicken
1/3 c Green onion, chopped
1/2 t Salt
1/4 c Melted butter
1/2 c Shredded Jack cheese
2/3 c Picante sauce
1 t Ground cumin
8 ea Tortillas, flour
1/2 c Shredded Chedar cheese
Combine chicken, sauce, onion, cumin, oregano and salt in a saucepan. Simmer 5 minutes or until most of liquid has evaporated. Brush one side of tortillas with butter. Spoon about 1/2 cup of mixture on unbuttered side of tortilla. Top with cheese, fold over and bake in a dish for about 15 minutes.

1 1/2 -2 lbs chicken breast of thighs
2 tbsp oil
3 tbsp freshly squeezed lime juice(1-1 1/2 lime)
3 tbsp freshly squeezed orange juice(1 small orange)
1 1/2 tsp salt
1 tsp black pepper
1 tsp oregano
3/4 tsp ground cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp chili flakes
Chile verde sauce:
3 tbsp butter
3 tbsp APF
1 minced garlic clove
2 cups chicken broth
1/2 cup hatch green chile
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp black pepper
1/2 tsp salt
For the chimichangas
Burrito size flour tortillas
Oil for frying
Mexican shredded cheese

⭐️ CHIMICHANGAS (Chicken)
PICADILLO
1 lb lean ground beef
1/2 small onion
1/2 small bell pepper
2 cloves garlic
1 Tbsp beef bouillon powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
3/4 cup water
CHILE CON QUESO
1/2 Tbsp unsalted butter
1 jalapeño
1 Roma tomato
1 Tbsp fine diced onion
1 clove of garlic
1/4 tsp smoked paprika
1/8 tsp onion powder
8 oz Velvetta cheese
4 oz sour cream
1/2 cup whole milk
SOFT FLOUR TORTILLAS
3 cups all-purpose flour (400 to 410 g )
2 tsp baking powder (7.5 g )
8 oz hot water (236.59 ml )
1/3 cup lard or shortening (65 g) *use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt) *use salt of choice
**For burrito size tortillas divide the dough into 6 to 8 dough balls

1 cup beef broth
1 onion
2 garlic cloves
3 roma tomatoes
3 Anaheim or 2 bell peppers
2 bay leaves
2 tsp marjoram
2 tsp Beef bouillon
1 tbsp salt
1 1/2 tbsp black pepper
Toppings(optional)
Refried beans
Spanish rice
Pico de gallo
Avocado
Salsa
Sour cream
Lettuce
