How To make Light Chicken Quiche
2 tablespoons parmesan cheese, non-fat
1/4 teaspoon paprika
3 sheets phyllo dough
2 each egg whites
1/2 cup egg beaters
1/2 cup ricotta cheese, non-fat
2 tablespoons flour
1/2 cup evaporated skim milk
6 ounces chicken, white meat
cooked and cubed
2 ounces swiss cheese :
grated
1 cup asparagus or other veggie
2 tablespoons green onion :
chopped
2 tablespoons parmesan cheese -- grated
Preheat oven to 350 degrees F. Lightly spray a 9-inch pie pan with vegetable oil cooking spray (butter flavored). Combine 2 tablespoons non-fat parmesan cheese with paprika and set aside. Stack and cut sheets of phyllo dough in half. Place one square of phyllo in pie pan, lightly spray with vegetable oil cooking spray and sprinkle with 1 teaspoon cheese mixture. Layer remaining squares and cheese mixture in the same manner.
Combine egg whites, egg substitute, riccotta, flour and milk. Stir in chicken, swiss cheese, vegetables and green onions. Pour into prepared pie crust. Sprinkle with freshly grated parmesan.
Bake for 30 minutes or until lightly browned. Cool for 10 minutes.

Quiche is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables.
I am using chicken and mushroom filling which is my favourite and feels so light.
Ingredients for crust
1-1/4 flour
3 tbsp cold butter
3-4 tbsp cold water.
Method
To make the pastry, tip the flour and butter into a mixer, and mix until its mixed and crumbly. Add 2-3 tbsp according to need cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 15 minutes. The pastry can also be frozen for up to a month.
Roll the pastry into a circle roughly 3mm thick on a floured surface, then use it to line a deep tart tin. Prick the base all over with a fork.
line with a baking paper and fill with baking beans.
Bake in oven for 15 minutes at 150c.
After 15 minutes take out paper and baking beans and bake again for more 10 minutes.
Now crust is ready .
for chicken filling
1 cup boiled chicken
1 cup mushrooms
few olives optional
Method
in a pan sauté mushrooms and add boiled chicken.
Add salt and black pepper according to taste. sauté for sometime and filling is ready.
cream filling
1/2 cup heavy cream
1 cup any cheese I like to use mozzarella
2 eggs
spices-black pepper, salt, chilli flakes, dry basil.
Method
Mix everything in a a bowl and beat together.
once pastry crust is ready sprinkle chicken mushroom over the base, pour over the cream mix. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, if required and serve it as it is or with salad.

How to make Asparagus and Smoked Chicken Quiche
Thyme flecked smoked chicken and asparagus quiche is perfect for a lunch or a spring brunch spread.

Serves 6
Ingredients:
Pastry
200 grams / 1 1/4 cups plain flour
130 grams / 4.6 ounces butter, cold and cubed
1 egg
2 tablespoons milk
1/2 teaspoon salt
Filling
5 eggs
80 milliliters / 1/3 cup milk
1/2 teaspoon wholegrain mustard
1/2 teaspoon fresh thyme, roughly torn
1/2 teaspoon salt and pepper
100 grams/3.5 ounces smoked chicken, roughly chopped or torn into bite size pieces
230 grams / 8 ounces asparagus, stem removed (slice or break at 1 inch above the base)
1 1/4 cups grated mild cheese
Directions:
- Preheat the oven to 150°C/300F and greaseproof a baking dish.
- Roll the pastry out and create a firm edge, flattening slightly with a fork.
- Lay half the asparagus inside the pastry.
- Place the eggs, wholegrain mustard, fresh thyme, salt, pepper and milk into a bowl and whisk lightly until the eggs are broken, trying not to create too many bubbles.
- Scatter the smoked chicken over the base of the pastry.
- Lay the asparagus on top and pour the quiche filling slowly and evenly over the top.
- Sprinkle the grated cheese evenly over the quiche.
- Place in the oven and bake for 40 minutes, raise the temperature to 180C/350F and continue baking until golden brown, a further 15 minutes for a total baking time of 55 minutes.
- Remove from the oven and allow to sit and cool for 5 minutes.
- Slice and serve immediately.
