How To make Chicken Asparagus Quiche
1 pastry shell
(9 inch)
1 cup cooked :
diced chicken
1 package frozen or fresh asparagus
spears -- cooked and drained 1 cup shredded Swiss cheese
3 eggs
1 cup light cream
Salt and pepper to taste
Bake pastry shell at 400 degrees for 5 minutes. Place chicken over bottom of sh ell and arrange asparagus spears over chicken. Sprinkle cheese evenly over aspa ragus. Combine eggs, cream, salt and pepper; blend until light and frothy. Pour gently over all. Bake at 375 degrees for about 45 minutes, or until set and kn ife inserted near center comes out clean. CRUSTLESS QUICHE RECIPE
(makes 8 slices)
Ingredients:
1/2 cup red bell pepper, finely chopped (75g)
1/2 cup green onions, finely chopped (50g)
1/2 cup sweet potato, grated (75g)
1 cup cheddar cheese, grated, or any other melting cheese (100g)
5 eggs
1 cup cottage cheese (225g)
1/2 cup milk (120ml)
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
158 calories, fat 8.6g, carb 7.9g, protein 12.3g
Preparation:
In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 8 equal pieces.
Serve and enjoy!

At one point I was crazy about home made quiche. I like to know what I put in it and add things that are healthy and nice. This is the complete result of the Chicken and asparagus quiche after baking. Of course I gave one to a friend and the other for lunch for the week. Delish!

How to make Asparagus and Smoked Chicken Quiche
Thyme flecked smoked chicken and asparagus quiche is perfect for a lunch or a spring brunch spread.

Serves 6
Ingredients:
Pastry
200 grams / 1 1/4 cups plain flour
130 grams / 4.6 ounces butter, cold and cubed
1 egg
2 tablespoons milk
1/2 teaspoon salt
Filling
5 eggs
80 milliliters / 1/3 cup milk
1/2 teaspoon wholegrain mustard
1/2 teaspoon fresh thyme, roughly torn
1/2 teaspoon salt and pepper
100 grams/3.5 ounces smoked chicken, roughly chopped or torn into bite size pieces
230 grams / 8 ounces asparagus, stem removed (slice or break at 1 inch above the base)
1 1/4 cups grated mild cheese
Directions:
- Preheat the oven to 150°C/300F and greaseproof a baking dish.
- Roll the pastry out and create a firm edge, flattening slightly with a fork.
- Lay half the asparagus inside the pastry.
- Place the eggs, wholegrain mustard, fresh thyme, salt, pepper and milk into a bowl and whisk lightly until the eggs are broken, trying not to create too many bubbles.
- Scatter the smoked chicken over the base of the pastry.
- Lay the asparagus on top and pour the quiche filling slowly and evenly over the top.
- Sprinkle the grated cheese evenly over the quiche.
- Place in the oven and bake for 40 minutes, raise the temperature to 180C/350F and continue baking until golden brown, a further 15 minutes for a total baking time of 55 minutes.
- Remove from the oven and allow to sit and cool for 5 minutes.
- Slice and serve immediately.
