This quiche recipe with mushroom, spinach, and feta will surely be the star of the show at any breakfast or brunch you serve up. Quiche's are traditionally a French tart with custard filling, but you won't need any complicated pastry dough for this recipe. To make this easy savory bite, you'll just add mushroom, spinach, and feta cheese to your custard batter and ladle a generous amount into a baking tin before sticking them in the oven.

Zucchini Crustless Quiche
As Fall approaches and zucchini is in abundance, it is time to find more ways to serve this delicious vegetable. Mary shows you how to prepare it in a crustless quiche. You can find the full recipe here:
EASY Zucchini Quiche Recipe
EASY Zucchini Quiche recipe is perfect for breakfast or brunch, plus perfect for lunch leftover. This Zucchini Quiche is creamy and healthy with lots of zucchini. This can also be made with or without a pie crust.
Pie Crust pre-made or video link
Filling
2 Zucchini, sliced
1 Tomato, sliced
5 slices Mozzarella Cheese
1 cup Heavy Cream
4 Eggs
¼ cup Parmesan
¼ teaspoon Italian Herbs
½ teaspoon Salt
¼ teaspoon Pepper
Preheat oven 350 degrees
1. In a bowl, add heavy cream, eggs, parmesan cheese, salt and pepper and mix until thoroughly combined. Set aside.
2. In a pie dish, place the pie crust and form the dough to fit inside the pie dish.
3. Place a single layer of sliced mozzarella cheese to cover the bottom of the pie.
4. Place a single layer of sliced tomatoes. Sprinkle salt evenly over salts and Italian herbs.
5. Layer the sliced zucchini in an overlapping, side by side circular pattern creating an outer layer and then and inner layer.
6. Pour the egg-cream mixture over all the zucchini.
7. Add additional grated parmesan cheese all over the top.
8. Place in the oven for 50 – 60 minutes or until the center is set and no longer giggly.
9. Let cool for 10 – 15 minutes before cutting.

Stir and bake crustless pie! Squash / courgette / zucchini quiche!
Easy peasy stir and bake skoosh (squash/courgette/zucchini) crustless pie / quiche / tart! Here's the recipe for Lottes nemme squshtærte which I got from my lovely friend, Sue! Do you use the Flylady system - we menuplan once a week. This is a great recipe to use up what you have in your fridge!
Mix everything together and cook in a tart tin (circa 10/11 inches, 24-26 cms) for approximately 45 minutes at 175c/350f.
700g of squash/zucchini/courgette (or any mix of veggies – use what you have in the fridge/pantry!)
200g of leftover chopped ham/chicken, etc
200g of grated cheese (I used mozzarella)
30g (about 4 or 5 tablespoons) porridge oats/rolled oats
95g flour (about 9 or 10 tablespoons)
1 teaspoon of baking powder
¼ decilitre of oil (about 2 tablespoons) – not essential
3 eggs
1 decilitre/100mls of milk (about half a cup)
