Hearty Red Lentil Stew (Chili Sin Carne) & Stone Ground Cornbread

STONE GROUND CORNBREAD
Wet ingredients
1 1/2 Tbs ground flaxseed
1 c unsweetened almond milk
Mix together and set aside to form a gel for a few minutes
Then add 1/2 c applesauce and 1/2 c maple syrup and combine with the gel mixture
In a separate bowl combine::
1 c corn meal
1 c Bob's Red Mill gluten free all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Add the dry ingredients into the bowl with the wet ingredients and mix well with a large spoon or whisk. Then gently mix in:
1 c roasted corn (fresh or frozen)
1 Tbs canned diced green chilis (optional)
Drop into a silicon muffin pan and bake at 350 degrees F for 30-35 minutes, until lightly browned and a toothpick comes out clean
HEARTY RED LENTIL STEW (CHILI SIN CARNE)
2 carrots, chopped
1 red bell pepper
1 small jalapeño, chopped
2 celery stalks, chopped
Add chopped vegetables to an Instant Pot (electric pressure cooker - see link above) or a stock pot.
2 c red lentils, rinsed and drained
1 can garbanzo beans, rinsed and drained
1 large can fire roasted tomatoes with liquid
1 1/2 Tbs chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground chipotle powder
1/2 tsp red pepper flakes
1 pkg organic veggie tempeh, cubed
2 Tbs fresh lemon juice
1 shake black pepper
1 shake wild porcini salt (from Williams and Sonoma)
3 cups organic vegetable broth
Set Instant Pot on manual setting for 10 min. When finished, release the pressure and add the juice from 3 small limes with zest and 1/4 cup of fresh cilantro.

SLOW COOKER LENTIL CHILI {VEGAN}
Ingredients
▢1 medium diced onions white or yellow onions
▢1 can (15 oz) diced petite tomatoes with juices
▢1 can (6 oz) tomato paste
▢4 cloves minced garlic about 2 Tbsp
▢1 cup brown lentils uncooked (you can also use green or red lentils)
▢1 can (15 oz) kidney beans drained
▢1 can (15 oz) black beans drained
▢3 Tbsp chili powder
▢1 Tbsp ground cumin
▢½ tsp ground cinnamon
▢1 tsp smoked paprika
▢1 tsp sweet paprika
▢½ tsp onion powder
▢¼ tsp garlic powder
▢1 tsp Dry Mustard
▢½ tsp kosher salt or, to taste
▢½ tsp freshly ground black pepper or, to taste
▢4 cups coconut milk you can replace this with same amount of vegetable broth or water
▢⅓ cup fresh cilantro for garnish
▢freshly grated vegan cheddar cheese or any other vegan cheese for garnish
How to Make Slow Cooker lentil Chili
Add diced onions, canned petite diced tomatoes, tomato paste, and freshly minced garlic in your slow cooker.
Then add everything else. Stir lightly. Cover with a glass lid and slow cook on low for 6 hours. You can also cook on high for 3 hours. (I recommend cooking on low for best taste)
Vegan Lentil Chili
This is the easiest, tastiest chili ever. It is winter and time for comfort food. You will make this recipe over and over again.
Recipe:
1 Medium Onion Diced
1 cup each diced carrots and celery
1 small jalapeño diced. remove the seeds and veins if you don't want too much heat.
1 can stewed tomatoes
1 can diced canned green chilis
3 cups of vegetable broth
1 TBS Chili Powder
1 tsp cumin
1 tsp salt
1 tsp smoked paprika
1 TBS brown sugar/coconut sugar
3/4 cup pink lentils
1 can black beans
1/4 cup cashews
1/4 water
1 cup corn
It all goes into 1 pot. Add diced onions, corn and celery into a large pan. You can sauté in a bit of oil or water. When the vegetables become softer, add your spices and salt and continue to sauté for a few more minutes. Add the tomatoes, vegetable broth, beans, sugar and lentils. Stir and put on the lid. Simmer for 30 minutes.
When the chili is done simmering, taste it for salt. Add cashews and water to a blender and blend until everything is liquid. Add the cashew cream to the chili and stir.
Add the corn and heat through for a few minutes. Your chili is ready!
Serve with cornbread of your choice.
You can freeze leftovers in 2 cup portions for a quick future meal.
One pot Lentil chili
This dish is a fresh and easy way to have a warm meal with minimal preparation. Chop up the few vegetables, put everything in a big pot and let them do their magic. It is simple and delicious, perfect to share with your flatmates in autumn. Serves for 4-6 portion and also ideal for meal prep as well.
INGREDIENTS:
1 Onion
1 red pepper
1 courgette
400g tin kidney beans
400g tin chickpeas
2x 400g chopped tomatoes, with herbs
165g sweet corn
150g dried red split lentils
500g vegetable stock pot
1 bunch of coriander
500ml water
salt & pepper
Optional:
- chopped chilis, 1 tbsp. cinnamon/cumin/paprika, lemon juice,
avocado
- Also feel free to add or replace any kind of vegetable with your
favorites: carrots,
black beans, mushrooms or sweet potatoes are also good.
- Chilis are the best when cooked longer
HOW TO:
1. Chop all your vegetables and the coriander in small pieces.
2. Drain and rinse the kidney beans, chickpeas and sweet corn.
3. Add some oil to your pot and fry the chopped onions.
optional: cinnamon and chopped chilies, stir with a splash of
water
4. Slowly add all vegetables and beans, washed lentils, vegetable
stock pot and fill up with water until covered.
5. Add chopped tomatoes and coriander, stir well
6. Bring up to boil, then turn down the heat and simmer for 20-25
minutes
7. Stir and add water if needed until lentils are cooked and the chili
has thickened.
8. Season with pepper and serve with coriander on top.
