How To make Lazy Perogi Casserole
15 Lasagna noodles
2 c Cottage cheese
1 Egg
1/4 ts Onion salt
1 c Shredded cheddar cheese
2 c Mashed potatoes
1/4 ts Salt
1/4 ts Onion salt
1/8 ts Pepper
1 c Butter
1 c Chopped onions
-Sour cream Cook noodles as directed on package. Drain. Line bottom of 9"x13" pan with noodles. In medium bowl, mix cottage cheese, egg and onion salt together. Spread over noodles. Cover with a layer of noodles. In same bowl, mix cheddar cheese with potatoes, salt, onion salt and pepper. Spread over noodles. Cover with another layer of noodles. Melt butter in pan. Saute onion until transparent and soft. Pour over noodles. Cover. Bake 30 minutes in 350 degree oven. Let stand 10 minutes before serving. Serve with sour cream. Ingredients
Cabbage 2 Small, cored, chopped (leftover)
Butter stick 3 , divided
Canned sauerkraut 27 Ounce, drained, rinsed, liquid squeezed out using cheesecloth/ towel
Egg noodles 12 Ounce (1 package)
Kosher salt To Taste
Pepper To Taste
Directions
GETTING READY:
Cook egg noodles according to package directions.
Once done, drain well.
MAKING:
In a saucepan, combine 1 stick of butter, cabbage and brown over medium heat.
Add sauerkraut with 1 butter stick and mix well.
Season with salt and pepper.
Add cooked noodles, 1 butter stick, pepper and mix well.
SERVING:
Serve and enjoy!

Happy Vlogmas! My Mom's family is Polish and we always ate homemade Polish Pierogies on Christmas Eve. She would make more than a hundred of them in the weeks before Christmas and we would help roll out the dough and stuff them. It was a big project but it was for a special occasion. Much of the rest of the year, when we felt like eating homemade pierogies, but didn't feel like doing all of the work to make them, we would eat this instead. The taste is the same and it's super quick and easy to make.

Lazy Pierogi Casserole
You can half the recipe as this serves 8
4 pounds of potato and cheddar pierogies frozen
3 cups of cheddar and Monterey jack shredded
2 cans of condensed cream of mushroom soup
2 and 1/2 - 3 cans of water to water down the mushroom soup
salt to taste
3 onions
1 pound of pre-sliced smoked bacon slices as shown
2 cups of strained sauerkraut
3 cups of chopped white mushrooms
Fry all bacon and remove from pan. Fry the onions and mushrooms as shown in the video. Spray your baking tray based on my large 15 x 11 inch pan or a half size if you will half the recipe.
place half of the pierogies on the bottom of the pan followed by the mushroom liquid that you added the water to. Next add the bacon mixture followed by the sauerkraut and then cheese. Do the second layer ending with the bacon mixture and then the cheese.
Cover with tinfoil and bake in 375℉ oven for a half hour and then remove the tin foil. Bake an additional 1/2 hour uncovered.
Remove and serve as shown! I served mine at dinner time with a side Greek salad. This is a for sure must make. It is so easy to make and a crowd pleaser for sure! I will make this on a regular just because it tastes amazing and is simple to assemble!

Onions
Mashed Pototoes and Butter
Once you have the mashed potatoes your going too fry the onions
in a frying pan ,,
once everything is cooked your going too layer the bottom of the oven ready pan , please spray bottom with veggie oil to prevent sticking
One layer of Noodles
then Layer of mashed potatoes
cover with fried onions , then cover with shredded cheese, then repeat the layers Until you Reach the top
Once you are done ,, uncovered for next 30 Minute on 375 cut and enjoy
