Easy Beef & Broccoli
3 tablespoons of cornstarch
1 jar or 1lb of beef
1/2 cup of low sodium soy sauce
3 tbsp of brown sugar
1 tbsp of minced garlic
2 tsp of grated ginger
2 tablespoons of olive oil
4 cups of broccoli
1/2 cup of sliced onions

My name is Christine, and welcome to Frugal Fit Mom! Today I have 4 EASY crockpot recipes to try out. I got the original recipes from these awesome ladies:

Butter Beef -
CRANBERRY CHICKEN
Bone in, skin on chicken
Western/French dressing (8-12 oz.)
1 can cranberry sauce (jellied or whole berry)
1 envelope onion soup mix
Mix the sauce ingredients together. Rinse and pat dry chicken. Layer in crockpot with sauce. Grind pepper over all. Slow cook on low for 5-6 hours until chicken is thoroughly done. Serve over mashed potatoes or seasoned rice.

An Easy Home Canned Chili Con Carne

Recipe:(USDA Complete Guide to Home Canning)

3 cups dried pinto or red kidney beans
5 1/2 cups water
5 t. salt (2 t. for salting beans when they cook & 3 t. for the chili)
3 lbs. ground beef
1 1/2 cups chopped onions
1 cup chopped red bell peppers (or other types of peppers)
1 t. black pepper
3 to 6 T. Chili powder (I used 4T.)
2 quarts crushed or whole tomatoes (8 cups)
Wash beans thoroughly and put them in a 2 qt. saucepan. Add cold water to 2 to 3 inches above the beans, soak for 12 to 18 hours. Drain/discard water. Combine beans with 5 1/2 cups fresh water and 2 t. kosher salt. Bring to a boil, reduce and cook 30 minutes.
Meanwhile, brown ground beef, onions, and peppers, in a skillet. Drain off fat by spooning into a colander in the sink. Shake out the excess fat. Pour into large pot and add 3t. salt, pepper, chili powder, tomatoes. Drain beans after 30 minutes and add to meat. Simmer chili for 5 minutes.
Using sterilized jars fill leaving 1 headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with dampened clean paper towel that has white vinegar on it. It will help remove any fat that may have been dripped. Adjust lids and process in pressure canner.
***This recipe does 9 pints so if you have pressure canner you will need to use a canner rack to stack them. Process pints at 11lbs of pressure for 75 minutes for a dial gauge and 10lbs of pressure for a weighted gauge. You can also make this in quart and pressure can for 90 minutes.
