Cooking with Momma T: Salmon Cakes
Salmon Cakes
2 large potatoes, peeled and sliced
1 can of Salmon
1 tablespoon baking powder
1/4 cup All-Purpose Flour
2 tbsp Onion (minced)
1 tbsp Parsley Flakes
1 tbsp Seafood Seasoning
1 egg
1 cup of oil for frying
Directions
Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are tender. Mash and set aside.
Add the fish to the pot and cook until soft and flakey. Drain well and transfer the potatoes and fish to a large mixing bowl, add all-purpose seasoning, baking powder, flour, onion, parsley, and egg to the bowl; combine the mixture. Mold the fish into patties.
Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.
Fresh Salmon Cake Dinner | The Hungry Jawn
You shouldn't have to do a WHOLE lot of cooking for a delicious, easy, and fresh meal...at least, that's how I felt when making dinner for this week. I'm taking a classic dish my mom taught me and instead of using the canned salmon, I'm using fresh salmon! You can also make these salmon cakes for breakfast and eat them with a side of grits. These salmon cakes are CRACK. I hope you enjoy!
