How To make Lazy Chili Rellenos
29 oz Whole green chiles
- (1 can) 1 lb Sharp Cheddar cheese, cut
- in strips 1 1/2 c Milk
12 Eggs, beaten
1/2 ts Salt
Remove seeds from chiles. Stuff each with cheese strips. Place side by side in shallow baking dish. Separately combine milk, eggs and salt, mixing well. Pour over stuffed chiles. Bake at 350 degrees 50 to 60 minutes. This can be made ahead; it holds well. Makes 8 servings or 12 as a side dish.

EASY CHILE RELLENOS RECIPE
EASY CHILE RELLENOS RECIPE - The best and easy rellenos recipe that you can make. These Mexican stuffed peppers are so yummy.
Ingredients:
3-4 Rellenos Peppers
1 Can of Green Chile Enchilada Sauce
Choice of Mozzarella
*for the chicken (boil your chicken in a pot with some chicken broth & water, cook it well then drain it and add some chili seasoning from your local grocery store then mix it well)
- 4-6 eggs
- Canola Oil
- One a sheet pan add your Relleno peppers make sure you turn your oven on the boil (HIGH) then watch your peppers until the peppers are dark brown on both sides. Once they are done remove them from the oven and place them in a bowl with them covered up for about 4-5 mins.
Batter:
4-6 Eggs (separate the eggs whites in one bowl and the egg yolks in the other)
- In a bowl use your egg whites and blend them in with a blender for about 1 1-2 mins until you get Stiff peaks. Then you want to add your egg yolks back in using a spoon just to combine them together, then that's your batter.
- Peel your peppers then (optional) - you can remove the pepper seeds if you like make sure to cut an incision in the pepper to remove the seeds from the peppers, try not to make a big incision or you will not be able to stuffed the peppers.
- Insert your choice of good quality Mozzarella cheese inside the peppers and chicken (optional) if you would like. then cover those peppers back up, dip those peppers inside your batter very well.
- On med-high heat put 1-2 cups Canola Oil of and then starting cooking your peppers until golden brown on both sides.

Lazy Chiles Rellenos
Ingredients:
8 Whole Roasted Poblano Peppers, Peeled Seeded Chopped Poblano Peppers
1 1/2 C Montery Jack Cheese, Grated
5 Whole Large Eggs
2 C Whole Milk
Salt & Pepper to Taste
1/2 tsp Paprika
1/2 tsp Cayenne Pepper
Directions:
Preheat oven to 325*
Mix together eggs, milk, salt, pepper, paprika & cayenne.
Spray 9X13 pan with cooking spray.
Layer 1/2 the roasted poblanos in botton of pan.
Top with half the cheese.
Add last half of peppers.
Top with remaining cheese.
Pour egg & milk mixture over the top.
Bake for 35-40 minutes or until eggs are no longer jiggly. Cut into squares and serve with warm corn tortillas.
