Baked CHILE RELLENOS Mexican Dinner Idea with no meat. Love chile rellenos but hate the frying process? Check out my version baking these chile rellenos in the oven without losing any of the delicious flavor. This is a vegetarian dish. I even show you a one can ingredient for the red sauce for the chile rellenos to sit on while baking. I have a quick and easy way to roast these mild poblano peppers that I use for my Baked Chile Rellenos. Make 2 casseroles

Make sure the batter is nice and fluffy and it’s not runny before pouring
Ingredients:
7 peppers poblanos, hatch or Anaheim
6 eggs at room temperature
1/2 tsp black pepper
3/4-1 tsp salt
1/2 tsp baking powder
1/3 APF (all purpose flour)
1/4 cup milk or heavy cream
Optional: 1/4 onion, 2 roma tomatoes and 1 jalapeños or Serrano chopped and mixed together
Shredded queso Oaxaca or your favorite melting cheese
For the salsa:
4 roma tomatoes
Chile serranos or jalapeños
Chile de árbol
1/8 onion
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
Salt I’m using 2 tsp

Lazy Chiles Rellenos
So many Poblano peppers are growing in my backyard garden, so I had to make some chiles rellenos. The Pioneer Woman - Ree Drummond had the perfect recipe for me, Lazy Chiles Rellenos! They are so easy, I didn't have the exact ingredients and they turned out awesome! Such a simple recipe. Plus if you don't have fresh peppers, bust out some canned ones and it's even simpler!

Recipe:
8 whole Roasted, Peeled, And Seeded Poblanos
1-1/2 cups Grated Monterey Jack Cheese
3 whole Large Eggs
1 cups Whole Milk
Salt Pepper To Taste
1/4 teaspoon Paprika
1/2 teaspoon Cayenne
Preheat oven to 325 degrees. Take your poblano peppers and place on the bottom of your baking sheet, add half the cheese. Add more poblanos on top. Mix together eggs, milk, seasonings, and stir. Add the mixture to your dish.
Place your baking dish on a baking sheet and add warm water. Bake for 35 to 40 minutes or until eggs are firm. Cut in to squares and serve with a tortilla!

We love chili rellenos when we go out eat. They can be a challenge to make, but this chili relleno casserole gives you the same flavors, but is super simple to make. Give this easy chili relleno casserole recipe a try.
preheat oven to 425. Line a sheet tray with aluminum foil and spray with non stick cooking spray. Place 4 large poblano peppers on tray and bake 25 minutes, turning every 10 minutes. You want each side to blister and become slightly charred. After you take them out of the oven, place in a bowl, cover with plastic wrap and let sit for 15 minutes. After 15 minutes, peal off the outer skin, run under cold water and remove the stem and seeds. Set aside.
In skillet place 1 lb of ground beef, 2 tsp minced garlic and one small onion diced. Cook until well done and there is no longer any pink. Make sure it is crumbled well. Drain excess fat. Add 1 tsp black pepper, 1 tsp salt, and 1/2 tsp red pepper flakes. Cook 30 seconds and take off heat.
In bowl combine 5 eggs, 1/3 cup flour and 1.5 cups of half and half. Mix well.
You will need 1.5 cups sharp cheddar, 1.5 cups Monterrey jack cheese, and 1 cup of pepper jack cheese.
Spray 2.5 quart baking dish with non stick cooking spray. place half the relleno peppers on bottom. Top with 3/4 cup Monterrey jack cheese, then half of hamburger. Top with 1/2 cup of Monterrey jack and 1/2 cup cheddar. Repeat with remaining items in the exact same order. Once finished pour egg and flour mixture evenly over top. Bake at 350 for 25 minutes. after 25 minutes, add 1/2 cup of sharp cheddar on top and bake another 15 minutes. Let cool 10 minute. Top with your favorite salsa, guacamole, sour cream, lettuce, pico, etc.
