How To make Lazy Chili Rellenos
29 oz Whole green chiles
- (1 can) 1 lb Sharp Cheddar cheese, cut
- in strips 1 1/2 c Milk
12 Eggs, beaten
1/2 ts Salt
Remove seeds from chiles. Stuff each with cheese strips. Place side by side in shallow baking dish. Separately combine milk, eggs and salt, mixing well. Pour over stuffed chiles. Bake at 350 degrees 50 to 60 minutes. This can be made ahead; it holds well. Makes 8 servings or 12 as a side dish.

Easy Chile Relleno Casserole ~ Great for Brunch or Dinner ~ Feeds the Whole Family!
In today's video I will show you how to make this delicious and easy chile relleno casserole. It only takes about five minutes to prepare and can be served for breakfast, brunch, or dinner. You also have the ability to adjust the amount of spice in the dish. This recipe is mild. If you want no spice than replace the pepper jack cheese with just monterey jack. If you want more spice replace the regular chile powder with 1/4 of a teaspoon of either red pepper flakes, ground chipotle pepper, or ground cayenne pepper. 2 New Mexico chilies Or Anaheim
6 Roma tomatoes ????
1 medium/ small onion
Garlic ????- 4-5 large cloves
Caldo de pollo or dried chicken bullion- 1 Tbsp.
Cumin- 1/2 tsp.
Oil- 2 Tbsp.
Flour- 2 1/2 Tbsp.
Water- 51/2 c.
Pepper- 1/8 tsp.
Salt- 1/4 tsp.

Chile Relleno is definitely a Mexican version of comfort food. It’s served with simple tomato salsa to make it a perfectly complete dish. This Home-Style Chile Relleno Recipe takes you step-by-step on how to make this traditional Mexican dish of chile peppers stuffed with cheese, dipped in egg batter, and lightly fried.

Chile Relleno Casserole
(For 14 Camp Oven)
Ingredients:
2 lb. chorizo pork sausage
1- large yellow onion diced
2- 12 oz. cans evaporated milk
1- cup water
1/2 teaspoon salt
8 eggs
3/4 cup flour
2- 27 oz. cans whole green chilies seeded
2 cups mild cheddar cheese, grated
2 cups monterey jack cheese, grated
Directions:
Brown the onion and sausage in the bottom of the oven. Remove and set as side. Beat the eggs, add milk, water, salt, flour, then stir in 2 cups of the cheese. ( 1 cup each type) Open the chilies and put a layer in the bottom of the oven. Sprinkle 1/2 of the meat and cover with 1/2 of the egg/milk/ cheese mix. Add another layer of chilies, meat and the rest of the liquid. Top with the remainder of the cheese. Save one chili and arrange it in strips in a star pattern on top to decorate. Cover and bake at 425 degrees for 45-60 minutes. (1 semi loose ring of coals on bottom and 2 tight rings of coals on top) Rotate oven and lid every 15 minutes. Remove from heat when top is browned, let set for 5-10 minutes and ENJOY!!!
