Chile rellenos can be stuffed with anything you like, the process is the same, this is how me and my family enjoy them and let me tell you is delicious ???? TIP: you will know your egg whites are ready by flipping them over, if the foam don’t move, they are ready and then you can now add your yolks!!!! This step is the most important to have the perfect chile rellenos! Don’t miss it ????
Ingredients
Chile poblano
Eggs
1 1/4 cup of flour
1/2 tsp salt
1 toma tomato
1/4 onion
1 lb cheese
Sauce: it’s optional you can serve with out it
8 Roma tomatoes
1/4 onion
3 jalapeños
3 garlic cloves
2-3 tbsp chicken bouillon
1/2 tsp oregano
4-5 cups of water

Crispy Chile Relleno
4 – 6 Poblano peppers, roasted and peeled
1 lb. ground beef
½ of yellow onion, chopped
2 garlic cloves, minced
1 tsp oregano
2 tsp chili powder
1 ½ cups all-purpose flour
2 tbsp cornstarch
1 tsp cumin
1 tsp baking powder
Salt and pepper, to taste
½ - 1 can beer (we prefer a light beer like Coors Light)
Monterrey jack cheese, sliced
Oil for frying
In a skillet, brown the beef over medium-high heat. When it begins to brown, add in the onion, garlic, oregano and chili powder. Continue cooking until hamburger is done and onions are tender. Set aside.
In a bowl, whisk together the flour, cornstarch, cumin, baking powder and salt and pepper. Whisk in the beer until it reaches a pancake batter consistency. Set aside.
Take the peppers and cut a slit from the top down the middle- be careful not to cut all the way down the pepper. Leave about ½ - 1- inch from the bottom uncut. Carefully place about three slices of cheese in the peppers followed by about 2 tbsp of the beef, depending on the size of the peppers.
Take a skewer and “sew up” the seam of the pepper.
Heat the oil over medium-high heat until about 350 degrees F. in a skillet. Spoon the beer mixture evenly all over the peppers. Be sure to add batter over the open seam of the peppers. Place in the pepper in the oil, uncut side down, and fry until golden brown. Flip and fry the seam side until golden brown. Cool on a wire rack.
Top with shredded cheese, cheese sauce or salsa. Serve warm.
Tip: depending on the size of your peppers you may need to make more wet batter mixture.

Make sure the batter is nice and fluffy and it’s not runny before pouring
Ingredients:
7 peppers poblanos, hatch or Anaheim
6 eggs at room temperature
1/2 tsp black pepper
3/4-1 tsp salt
1/2 tsp baking powder
1/3 APF (all purpose flour)
1/4 cup milk or heavy cream
Optional: 1/4 onion, 2 roma tomatoes and 1 jalapeños or Serrano chopped and mixed together
Shredded queso Oaxaca or your favorite melting cheese
For the salsa:
4 roma tomatoes
Chile serranos or jalapeños
Chile de árbol
1/8 onion
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
Salt I’m using 2 tsp

Tip!!!! make sure you dont over beath your egg batter☺️ and jusy be careful while peeling the chiles, if you ripped your chiles its ok, just use toothpicks to close them together, just make sure you add same amount of toothpicks to each chile.
also dont over roast your chiles, they will be too soft to stuff!
salsa de tomate; boil 4 tomatoes with 1 habanero or chile serrano, blend with 1/2 cup water, 1 garlic clove, a small piece of onion, 1/2 tsp oregano and salt, then fry it with a little oil, let it simmer for 3-5 minutes ????
Ingredients: filling is enough for 8 chiles

2 medium potatoes;cubed
Queso Oaxaca or Monterey Jack
3 Roma tomatoes
Handful cilantro
Chile serranos
1/2 onion;divided
2 garlic cloves
1 tsp ground cumin
2 tsp garlic salt
1 tsp black pepper
Salt I used 1/2 tsp
