How To make Korean Style Marinated Skirt Steak/Grilled Scallions/Tortillas
1 tablespoon sugar
3 tablespoons soy sauce
1 tablespoon sake
4 large cloves garlic
finely chopped
3 scallions :
white part only,
minced 2 teaspoons finely chopped ginger
2 teaspoons toasted sesame oil
1 pound skirt steak :
trimmed and cut
-- into 4 portions 1 tablespoon vegetable oil
Salt and freshly ground pepper
Preheat grill. Combine sugar, soy sauce, sake, garlic, scallions, ginger and sesame oil in a mediumsize flat dish. Add the steak and coat well with the marinade. Let marinate at room temperature for 30 minutes, turning once. Remove meat from marinade and grill on each side for 2 to 3 minutes, for medium rare. Remove from grill, cover and let rest for 5 minutes. Slice thinly against the grain.

Korean Fusion Steak Tacos (With Kimchi)
I always like to intertwine different cuisines and cooking methods to create new and original recipes. This recipe is a first for me and it came out extremely well. I implore you to be creative and try new things. Don't ever be afraid to experiment in the kitchen! This recipe rocks; give it a try!
Ingredients:
2 Oz. Soy sauce
1 Oz. Sesame oil
1 Oz. Chili oil
Sesame seeds
1 Oz. Chopped garlic
1 Oz. Rice wine vinegar
1 # Skirt steak
2 Tbsp. Hoison sauce
Mixed greens
Sprouts
Juice of 1 lime
4 Oz. Mayonnaise
1 Oz. Sriracha
6 Tortillas
1 Bunch Scallions
Kimchi
Procedure:
1. Cut the skirt steak into very thin strips; about 1/4 inch.
2. Prepare the marinade. In a medium sized bowl combine the soy sauce, garlic, sesame and chili oils, vinegar, hoison, and sesame seeds.
3. Thoroughly coat the steak with the marinade and allow to marinate for 30 minutes.
4. In a separate bowl, combine the mayo with the sriracha and lime juice. Set aside.
5. Heat a large pan ( or grill pan ) over high heat with a small amount of oil. Lightly toast the tortillas on each side for about 10 seconds to get them nice and hot. Set them aside.
6. Introduce the marinated steak in 2 batches evenly over the pan and cook for 1-2 minutes turning frequently to produce a perfect medium rare. Set the cooked steak aside.
7. In a separate bowl, combine the greens, scallions, and the kimchi with the spicy mayo mixture.
8. Create your taco! Place some dressed greens in each tortilla, top with the steak, fold and garnish with sprouts for an awesome presentation. Your gonna love it. Enjoy guys!
Kalbi Beef Tacos I Marcus Meacham
You've probably heard of Korean-Mexican fusion. Now's your chance to make these delicious tacos at home.
INGREDIENTS:
For the marinade:
1 cup soy sauce
4 garlic cloves
3 tablespoon sesame oil
1/3 cup sugar
4 tablespoons fresh ginger, peeled and chopped
1 Asian pear, cored and chopped
Handful of cilantro sprigs
For the tacos:
2 pounds skirt steak, sliced super thin
Juice of 1/2 lemon
2 limes, segmented and roughly chopped
2 green onions, sliced on a bias
1/4 cup green tomato, chopped
1 carrot (sliced paper thin with peeler)
Salt and pepper as needed
8 fresh corn tortillas from a local food truck or taco shop
Black and white sesame seeds
STEPS:
1.) In a blender, combine all marinade ingredients and blend until smooth. Combine marinade with steak and let sit for at least 20 minutes.
2.) Heat a grill over high heat and sear steak until caramelized and cooked to desired doneness.
3.) In a cast-iron skillet, warm corn (or flour) tortillas until pliable.
4.) To assemble: Top 2 tortillas with kalbi beef, carrots, onions, and limes. Garnish with black and white sesame seeds.

3 lbs beef thinly sliced, I used ribeys
1 Asian pear (or 1 apple)
4 small carrots, thinly sliced
2 small onions, sliced
8 stalks of scallion, cut 1 inch wide
9 TBSP low sodium soy sauce
4.5 TBSP water
3 TBSP honey
3 TBSP brown sugar
3 TBSP sesame oil
3 TBSP mirin
1 bulb minced garlic
1 tsp black pepper
1. Combine all of your ingredients and let it sit for at least 10 mins— overnight for best results.
2. Then cook on a skillet on high heat for 2 minutes untouched. Mixed. Cook for another minutes untouched until cooked through or until there is a nice sear.
3. Enjoy with rice and preferred side dishes
