How To make Marinated Skirt Steak Fajitas
one lime
juice of 2 tablespoons vegetable oil
2 garlic cloves
1/2 teaspoon ground cumin
1/2 jalapeno :
seeded
1/4 cup cilantro leaves
1 pound trimmed skirt steak
salt and freshly ground pepper twelve 7-inch flour tortillas -- warmed accompaniments: salsa sour cream sliced red onions lime wedges
In a food processor or blender combine the lime juice, oil, garlic, cumin, jalapeno and cilantro leaves and process until pureed. Alternatively, combine the lime juice and oil in a bowl. Finely chop together the garlic, cumin, jalapeno and cilantro and whisk into the juice and oil mixture. Pour the mixture over the steak and allow to marinate for 30 minutes.
Preheat charcoal grill or stovetop grill pan. Season the steak with salt and pepper. Grill the steak for 2 to 3 minutes per side or until cooked to desired degree of doneness. Transfer the steak to a cutting surface and allow to stand for 5 to 8 minutes. Cut steak across the grain into thin slices or chop into 1/2-inch pieces. Serve immediately with warm tortillas and accompaniments.

Here is our updated recipe for The best carne asada -
Ingredients:
2-4 Pound of Skirt steak or your choice of Beef
(Chuck Steak or Ground Beef for burgers)
3-4 Tablespoons of Soy Sauce
3-4 Fresh Chopped Garlic Cloves (Just clarify most people wouldn't use whole garlic LOL)
1-2 Tablespoons Bouillon of Choice or 1 Teaspoon Salt
1/2 Teaspoon of White or Black Pepper
1 Teaspoon Ground Cumin
1/2 Teaspoon Paprika
1 Teaspoon Chili powder
1-2 Teaspoons Ground Ginger
1/2 Teaspoon Garlic Powder
Optional
Oil
1/2 Teaspoon of Apple Cider Vinegar or Lime Juice
1 Teaspoon Sugar if you like a sweet fajita
1/4 Cup Beer if you're Grilling outside

I have a weird relationship with fajitas at Mexican restaurants. I think they tend to be dry unless they are doused in cheese and sour cream but, on the other hand, my wife and daughter love going to a Mexican restaurant to eat chips, salsa, queso, guacamole, and fajitas.
So, to compromise, I'm making grilling flank steak fajitas on my Big Green Egg!
FLANK STEAK FAJITA RECIPE
Flank Steak Marinade
[]Olive Oil 1/4 c
[]Chili Powder 1 tbsp
[]Worcestershire 2 tbsp
[]Cumin 1/4 tbsp
[]Cayenne 1/4 tsp
[]Minced Garlic 4 cloves

*This flank steak marinade is good for a flank steak up to 3 lbs.
