How to make Korean Bulgogi Tacos | Cooking with Christy
Welcome to my first vid!
Recipe:
Korean Bulgogi Tacos
2 pounds beef (any cut will do, I used Flank)
1 Cup soy sauce
1/2 Cups Mirin
1 Cup brown sugar
1 Tablespoon cup sesame oil
6 Cloves garlic, roughly chopped
6 Scallions, roughly sliced
1 teaspoon fresh ginger
In a medium-sized saucepan, whisk together the soy sauce, Mirin, brown sugar, sesame
oil, garlic, scallions, and ginger. Bring to a simmer and reduce until it reaches the consistency of syrup. Strain, set aside to cool.
Divide cooled sauce in half. Place one half in a plastic squirt bottle or bowl. Pour the other into a plastic bag; this is your marinade.
Meanwhile, prepare the beef by removing any excess fat and silver skin. Place in
your bag with the marinade. Massage the bag, ensuring all pieces of beef are well covered. Seal tightly and marinate in the refrigerator for at least 2 hours and up to 24 hours.
Korean-Style Slaw:
3 cups thinly sliced Napa cabbage (or coleslaw mix/pre-shredded cabbage mix)
.5 cups julienned carrot
1 bunch chopped fresh cilantro
1 bunch green onions, sliced on the bias
1 julienned red bell pepper
Toss the cabbage, carrot, cilantro, red bell pepper and scallions together in a
medium bowl. Set aside.
Gochujang Aioli:
.5 cups mayonnaise
1-2 tablespoons Gochujang (or to taste)
1 teaspoon lime or lemon juice (or to taste)
Whisk together the mayonnaise with the Gochujang and citrus juice. Adjust to your
taste. Place in a small plastic squirt bottle or serving bowl.
Preparation & Assembly:
Heat your grill to high (or use an indoor grill pan or sauté pan. Grill marinated beef until it reaches your desired doneness. Medium rare is recommended. Let rest for 5 minutes and thinly slice against the grain. Place beef and slaw on a tortilla. Drizzle with reduced sauce and
Gochujang aioli.
