How To make Kerry Casserole (Irish)
3/4 lb Belly of pork
3/4 lb Smoked bacon
2 lb Potatoes
1/4 lb Mushrooms
1 t Rosemary
1 lb Onions
3/4 c Stock
1 x Salt and pepper
2 oz Butter
(Irish pork belly has a fatty layer, vital for the flavor, and a meaty layer. See if you can get your butcher to give you pork that has about equal amounts of pork and fat. Plain lean pork will not taste as good.) Cut meat into one-inch cubes. Peel and thinly slice potatoes. Peel or wipe mushrooms, and slice if large. Grease a large ovenproof dish with some of the butter, and place a layer of sliced potatoes in the bottom. Add half the meat pieces, seasoned and sprinkled with rosemary. Layer with half the vegetables, plus another layer of potatoes. Repeat, using all meat, veg and potatoes. Pour stock over and dot potatoes with remaining butter. Cover and cook in a moderate oven, 325F, for 2 1/4 hours. Uncover for the last half hour of cooking to brown the potatoes.

Mark Murphy demonstrates how to bake our famous Kerry Apple Cake.
This is one of our favourite desserts we serve and bake here at Dingle Cookery School. You will love this recipe and, you won't even need an electric mixer.
If you are new to baking this is going to be so easy, Promise!!
Ingredients
225g Self-Raising Flour
110g Sugar
110g Butter cubed (Room Temperature)
4 Large Cooking Apples peeled and sliced finely
2 eggs
2 Tbsp. Milk
1 Tbsp. Brown Sugar
25g Flaked Almonds
Method
Pre-heat the oven to 170°C
Cream the butter and sugar, beat in the eggs and milk and sieve in the flour. Mix together and add in the apples.
The mixture should be quite wet, if it is a little dry, add a small drop of milk.
Place in a 9'' deep greased tin and top with the flaked almonds and brown sugar.
Bake in the oven for 30 minutes.
Serve warm with some chantilly cream or custard.

500g chicken breast, 30g parsley, 30g coriander, juice of 1 lemon, 2tsp rose harissa

Corn, butter, celery salt

Hi guys, today's video is for a traditional Apple cake from Kerry Ireland. I moved to Kerry about 7yrs ago (for the love of a good woman) and this is one of my favourite dishes. Simple effective and when you cut the apples small enough, they dissolve into the cake, so you only know they're there when you try it. Its glorious just out of the oven warm with freshly whipped cream. It's also associated with Halloween as the apples are just ready to be used for baking.
