How To make Kerry's Meat Pie
PAStrY:
1/4 lb Butter
3/4 c Flour, white
3/4 c Flour, self-raising
Water, ice cold FILLING:
2 lb Lamb or beef
-(pre-cooked cubes) 2 md Brown onions
1/4 c Seasoned flour
-(flour with basil, -oregano and pepper) 1/2 lb Mushrooms
6 Tomatoes
1 Capsicum (green pepper),
-sliced 1 c Bread crumbs
1/2 c Tomato sauce
MAKE PAStrY: Cut butter and flour with two knives until mixture contains particles the size of small peas. Sprinkle with cold water until pastry clings together. Shape into ball and place in refrigerator for 1/2 hour. Roll out to cover pie dish (about 8 inch). Leave enough pastry for a top. Pre-bake the pie shell for 10 minutes at 350 degrees F. To prevent crust walls from collapsing, fill with dry beans for the first five minutes. MAKE THE FILLING: fry onions and meat, continuing until onion is lightly browned. Add flour mix, sliced tomatoes, sliced capsicum, tomato sauce and bread crumbs to pan. Continue until capsicum is softened. Add mushrooms and fry for 1 minute more. Place the fried mix into the pre-baked pie shell, cover with pastry lid and cook in moderate oven for 20 minutes. Serve hot . 1. SOUP
3 onions
1 bulb garlic
4 peppers
8 carrots
2 tins chopped tomatoes
1 jar sweet peppers
300ml veg stock
2. COTTAGE PIE
2 ladles of soup mix
500g minced beef
Peas
Mashed potatoes
Cheese
3. LASAGNA
2 ladles of soup mix
500g minced beef
White sauce
lasagna sheets
Cheese
4. FISH PIE
4 eggs
1 pack fish pie mix
Peas
White Sauce
Mashed Potatoes
Cheese
CURRY PASTE:
Thumb of ginger
2 Onions
4 Garlic cloves
2tsp coriander
1tsp numeric
1tsp cumin
1tsp fennel seeds
5. LAMB CURRY
1/2 above curry paste
500g Diced Lamb
1 tin tomatoes
1/2 tin of water
6. VEGETABLE CURRY
1/2 above curry paste
1 tin tomatoes
1 tin coconut milk
1 tin chickpeas
Selection of veggies
7. KATSU CURRY
1 Onion
2 Carrots
2 Garlic cloves
Ginger nub
1 tsp curry powder
1/2tsp numeric
2tsp Honey

RECIPES 1: Spinach & Ricotta Pie
Garlic
Onion
Spinach
1 egg
Ricotta Cheese
Feta Cheese
Filo pastry
Chop onion finely and seat it with the garlic in a pan with olive oil. Add the spinach and cook until wilted.
Beat the egg and Ricotta cheese together and add some nutmeg and seasoning.
Add the spinach mix into the cheese mix.
Lay out the filo pastry into a baking dish. Spoon the spinach mix into the centre of the filo pastry, and sprinkle over the feta cheese and close up the filo sheets. Brush with egg or milk.
Put it into the oven for 30-40 mins at 200 degrees centigrade.
RECIPE 2 Chicken and leek Pie:
Onion
Garlic
Chicken
2 leeks
Philadelphia Cheese
Chicken Stock
Wholegrain Mustard
Puff Pastry
Brown the chicken in a pan and then add the onion and garlic and leeks. Add in the Philadelphia, stock and mustard and simmer on a low heat for 2-3 minutes.
Spoon the mixture into an oven dish and cover with puff pastry.. put a dish in the middle to keep the pastry from sinking. Brush the pastry with milk or egg and place into the oven for 30 minutes at 200 degrees centigrade.
RECIPE 3 Posh Pizza:
Puff Pastry
Basil
Garlic
Olive Oil
Cherry Tomatoes
Onion
Ham
Ricotta Cheese
This pizza can be made anyway you like. I always blind cook the puff pastry first (place it into the oven for 10 minutes and then add all your toppings) I then lay the ham onto the posh pizza at the very end before serving :)
