Ingredients:
1 cup Oreo Crumbs 3 tbs Butter 8 oz. White Chocolate 1 1/2 cups Whipping Cream 4 (8 oz.) bars of Cream Cheese 1 cup Sugar 4 Eggs 1 tsp Vanilla Extract 1 1/4 tsp Peppermint Extract 1/2 cup Sour Cream 5 oz. Chocolate Chips 1/2 cup crushed candy canes
Instructions:
In a medium bowl mix together 1 cup Oreo crumbs and 3 tbs melted butter with a fork. Press the crumbs evenly into a 9x9 round pan. Put the crust into the oven at 350f for 10 minutes. either in a microwave safe bowl or small saucepan, melt together 6 oz. white chocolate and 1/2 cup heavy cream. Once melted set aside to cool. In a large bowl cream together 3 1/2 bars of cream cheese and 1 cup sugar. Mix in 4 eggs, 1 tsp vanilla extract, 1 1/4 tsp peppermint extract, 1/2 cup sour cream, the melted white chocolate, 5 oz. chocolate chips and 1/2 crushed candy canes. Pour the filling into the crust and put in the oven at 325f for 1 hour and 20-30 minutes or until the middle is barely firm. Cover and put in the fridge over night or about 8 hours. Melt 2 oz. white chocolate and set aside. iin a large bowl whip 1 cup heavy cream until it starts to firm. In another large bowl cream 1/2 bar cream cheese. Pour the melted white chocolate into the cream cheese and add 1/4 tsp peppermint extract. Pour the whipped cream into the cream cheese mixture and blend together. Spread the cream on top of the cooled cheesecake and sprinkle crushed candy cane on top for visual effect.
