How To make Jalapeno Jelly
3/4 c Jalapeno (or serrano)
-peppers 2 md Green bell peppers, seeded
-and sliced 1 1/2 c Distilled white vinegar
6 1/2 c Sugar
6 oz Bottle liquid pectin
1 tb Dried red pepper flakes
Green food coloring, -optional Servings: makes 4 - 1/2 pint jars Notes: Generally used as an hors d'oeuvre with cream cheese on water biscuits. (That's Horses de Ovaries, Al). You can also use it as a glaze for meats, game, and poultry or as an accompaniment to meats or game. Place jalapeno peppers, green peppers, and vinegar in bowl of food processor. Using metal blade and quick on and off turns, finely grind peppers. Scrape pepper mixture into heavy saucepan. Stir in sugar. Cook over high heat, stirring constantly, until liquid comes to a full, rolling boil. Boil for 10 minutes. Remove from heat. Stir in liquid pectin, red pepper flakes, and 2 to 3 drops food coloring, if desired. Immediately pour into hot sterilized jars and vacuum seal. This is the first video in the new Holiday Series, focusing on tasty, traditional foods that you can prepare and serve at Thanksgiving, Christmas, and New Year's. We love to eat Hot Pepper Jelly with cream cheese and Ritz Crackers as an hors d'oeuvre over the holidays, but it can also be used as a tasty way to dress up chicken or pork.

INGREDIENTS
4 1/2 cups finely chopped bell peppers
1/2 cup chopped jalapeños (remove seeds if you don't want it too spicy)
1 1/4 cups apple cider vinegar
1 1/2 packages Sure-Jell
5 cups sugar
This recipe makes about a dozen 4 oz. jars or 6 half-pint jars.

Our jalapeno plants have produced a ton of jalapenos this year, and one of our favorite recipes to create is Jalapeno Jelly. This is a supper easy recipe that everyone must try. It's not spicy, it's sweet with a hint of heat. Perfect for pork, chicken, or mix it with a little cream cheese and make a delicious dip for crackers and vegetables.
Prepare canning jars.
In a food processor, shred the following
10 large jalapenos
2 large red peppers.
Once shredded place in very large stock pot with the following
1.5 cups apple cider vinegar
6 cups sugar
1 tsp salt
Bring to a boil and boil for 10 minutes. The mixture will bubble a lot, so please make sure and use a very large pot.
After 10 minutes, add 1.5 packets of liquid pectin to the mixture and boil for 1 minutes. You must use liquid, the powdered pectin will not work.
let cool for a few minutes, then place in jars.
Unopened jars will last 1 year,
opened jars will last 2 weeks in the refrigerator.
