How To make Jalapeno Jelly
3/4 c Jalapeno (or serrano)
-peppers 2 md Green bell peppers, seeded
-and sliced 1 1/2 c Distilled white vinegar
6 1/2 c Sugar
6 oz Bottle liquid pectin
1 tb Dried red pepper flakes
Green food coloring, -optional Servings: makes 4 - 1/2 pint jars Notes: Generally used as an hors d'oeuvre with cream cheese on water biscuits. (That's Horses de Ovaries, Al). You can also use it as a glaze for meats, game, and poultry or as an accompaniment to meats or game. Place jalapeno peppers, green peppers, and vinegar in bowl of food processor. Using metal blade and quick on and off turns, finely grind peppers. Scrape pepper mixture into heavy saucepan. Stir in sugar. Cook over high heat, stirring constantly, until liquid comes to a full, rolling boil. Boil for 10 minutes. Remove from heat. Stir in liquid pectin, red pepper flakes, and 2 to 3 drops food coloring, if desired. Immediately pour into hot sterilized jars and vacuum seal. Do you love jalapeno jelly? I do! It's so much better when you make it at home. Here is a simple, easy-to-make recipe for jalapeno jelly that uses sugar, pectin, and fresh jalapeno peppers. Perfect for chicken, fish, or even morning toast, but also as a starter glaze or sauce.

4 drops green food coloring if preferred - NOTE: I didn't use any, and you can see the jelly is still pretty green

Jalapeno Jelly - So pretty and so good!
Jalapeno jelly is so much fun! It's one of my favorites. Try some with cream cheese on a cracker or bagel. It's also good used as you would use mint jelly. It makes a great accompanyment with pork too! Try it, I know you'll like it.
