RACHEL’S BEST CORNBREAD // Cheesy Jalapeño-Fluffy and Moist ❤️ Step by Step
CORNBREAD is a perfect side for so many dishes, and just delicious in stuffing and my favorite Thanksgiving dressing too. Sweet cornbread can also be enjoyed alone, I guess you can say it’s perfect in every way. This cornbread is a sure thing in my house when Fall and Thanksgiving comes around. In this homemade recipe I add freshly grated cheddar cheese and finely minced jalapeño,and since I remove the veins and seeds it simply adds a subtle kick to the cornbread, but it can also be left out. You will absolutely love this super moist and fluffy cornbread, and you will never want store bought mixes again. I hope you give it a try.❤️
INGREDIENTS ________________________
1 1/4 C. All PURPOSE FLOUR
1 1/4 C. YELLOW CORNMEAL
1 1/2 Tbsp granulated sugar
1 tsp BAKING SODA
3/4 tsp SALT
3/4 C. SOUR CREAM
3/4 C. WHOLE MILK
2 LARGE EGGS
8 TBSP MELTED BUTTER (cooled slightly )
1 1/4 C. FRESHLY GRATED SHARP CHEDDAR CHEESE
1 C. FRESH CORN OFF COB OR FROZEN
1 FINELY MINCED JALAPEÑO (seeds and veins removed )

Jalapeño & Chive Cornbread Muffins ~ Dairy Free Recipe
Delicious cornbread with a spicy kick :)
Muffin or Cupcake Scoop (affiliate link)
1 cup all purpose flour (or a combination of all purpose and whole wheat)
1 cup corn meal
1 T baking powder
1/4 cup brown sugar
1 tsp salt
1 cup almond milk (or milk of your choice)
1 egg
1/4 cup oil
Bake at 400° for 20-25 minutes
1 jalapeño seeded and finely diced
2 T chopped chives

Jalapeno Cornbread Muffins
Wet Ingredients:
140g Cornmeal
300ml Milk
2 eggs
5 Tbsp sugar
115g melted, cooled butter
130g flour
140g MORE cornmeal
1.5 tsp salt
1.5 tsp baking powder
1 tsp baking soda
1 jalapeno, finely diced
Scoop into greased muffin tins (fill to about 3/4s of the way) and bake at 425 for 15-18 minutes depending on the size of your corn muffins.

SET OVEN AT 350 F. OVEN RACK SHOULD BE PLACED IN THE MIDDLE OF THE OVEN.
PREPARE A MUFFIN TIN – EITHER WITH CUP LINERS OR WITH A LIGHT COATING OF VEGETABLE OIL.
DRY INGREDIENTS:
1 CUP CORNMEAL
½ CUP UNBLEACHED ALL-PURPOSE FLOUR
1 TEASPOON BAKING POWDER
¼ TEASPOON SALT
½ TEASPOON BAKING SODA
WET INGREDIENTS:
1 CUP PLANT-BASED MILK OF CHOICE
1 TEASPOON APPLE CIDER OR WHITE VINEGAR
¼ CUP VEGETABLE OIL
2 TABLESPOONS MAPLE SYRUP
2-3 TABLESPOONS FINELY CHOPPED JALAPENO PEPPERS
HOW TO MAKE:
1) FIRST – ADD THE VINEGAR TO THE MILK. STIR TO COMBINE AND SET ASIDE
2) COMBINE ALL THE DRY INGREDIENTS. SET ASIDE
3) COMBINE THE MILK & VINEGAR MIXTURE, OIL, AND MAPLE SYRUP. MIX WELL.
4) ADD THE WET INGREDIENTS TO THE DRY. ADD IN THE JALAPENO PEPPERS. STIR ALL OF THIS MIXTURE UNTIL THE FLOUR IS ASBORBED INTO THE WET INGREDIENTS. DO NOT OVER MIX.
5) SCOOP THE BATTER INTO THE PREPARE MUFFIN TIN. EACH MUFFIN CUP SHOULD BE APPROXIMATELY ¾ CUP FULL
6) BAKE FOR APPROXIMATELY 18 MINUTES.
ONCE FULLY BAKED, REMOVE THE MUFFINS FROM THE OVEN AND PLACE ON A COOLING RACK.

Perfect Corn Muffins with Cheese and Jalapeno
Corn muffins are delicious, but adding cheese and jalapeno makes them irresistible. CG cooks up tasty jalapeno corn muffins with whole kernel corn to make them super moist and flavorful. If
you're not a fan of hot jalapenos, then try substituting milder pickled jalapenos which are often sold right alongside jars of hotter peppers at the grocery store. Topping the muffins with sliced
jalapeno makes them look so good!

What you need for this Jalapeno Corn Muffin Recipe
¾ cup CORNMEAL ...we use a medium grind in this recipe
1¼ cup ALL-PURPOSE FLOUR
2½ tsp BAKING POWDER
½ tsp SMOKED PAPRIKA
½ tsp CHIPOTLE or regular chili powder
½ tsp SALT...unless the corn or butter already contains salt
1 cup MILK
2 Tbsp OIL or use melted butter instead
4 Tbsp HONEY
1 EGG
1 cup CANNED WHOLE KERNEL CORN drained
¼ cup PICKLED JALAPENOS, roughly chopped
¼ ONION, minced
1 cup freshly shredded CHEDDAR CHEESE plus ¼ cup for topping
fresh JALAPENO deseeded and sliced for topping...or you can use pickled slices for the topping
How to make Corn Muffins
Place rack in middle of the oven.
Heat oven to 400 degrees Fahrenheit.
Grease 12 muffin pan cups or line with parchment paper baking cups and set aside.
Combine dry ingredients in bowl.
Combine remaining ingredients in another bowl and mix, but reserve fresh jalapeno slices and a little cheese for topping.
Add the dry ingredients to the wet and stir until ingredients are moistened.
Fill prepared muffin cups evenly.
Top with fresh jalapeno slices and a very light sprinkling of cheese. Bake 20-30 minutes or until toothpick inserted into center comes out clean and muffins are golden brown. Allow to cool for
5 minutes before removing from muffin tins.
