How To make Jack's Veggie Burger
2 c cooked lentils
1 c smoked Portobello mushrooms,
: mince 1 c bulgar wheat
2 cloves roasted garlic,
: pureed 1 c whole wheat bread crumbs
1 TB Worcestershire
2 TB walnut oil
1/4 ts tarragon, :
minced
: Salt and freshly ground : pepper to taste Prepare a wood or charcoal grill and let it burn down to embers. In a large mixing bowl, mash lentils until smooth. Add all other ingredients and mix until thoroughly combined. Refrigerate for at least 2 hours. Form into burgers. Brush the burgers with olive oil and grill for 6 minutes on each side or until done. Veggie Jamaican Patties | Dairy free patties | Jack fruit recipes
It’s #TastyTuesday with Jamaican patties using jackfruit! This delicious recipe was found at Ethicallyliving.com ???? Enjoy!
Ingredients:
PASTRY:
* 2 cups all purpose flour
* 1 teaspoon of sugar
* 1 teaspoon salt
* 1 tablespoon curry powder
* 1/4 cup coconut oil
* 1/2 cup cold vegan butter (cubed)
* 1/2 cup water
FILLING:
* One 14 ounce can of green jackfruit (drained and rinsed)
* One vegetable bouillon cube
* 1/4 cup water
* 1 teaspoon scotch bonnet pepper
* 1 tablespoon olive oil
* 1/4 cup flour
* 1 1/2 tablespoon soy sauce
* 1 1/2 teaspoon curry powder
* 1/2 teaspoon garlic powder
* 1/2 teaspoon smoked paprika
* 1/4 teaspoon dried thyme
* 1/2-1 yellow onion diced
* 2 tablespoons diced green onions
* 2 garlic cloves diced
* Almond milk to brush edges of pastry filling
Directions:
For pastry crust:
1. Mix together flour, curry powder, salt and sugar.
2. Add in butter and coconut oil.
3. Once it looks like breadcrumbs add water & knead and shape into a ball.
4. The dough should be sticky. Wrap the dough in plastic and place in the refrigerator for 20 minutes.
For the filling:
1. Add chopped yellow onion and green onion to a hot pan of olive oil. Sauté for 2 to 3 minutes.
2. Add the garlic to the pan and cook until softened and toasted.
3. Add jackfruit, scotch bonnet powder, herbs, spices and soy sauce.
4. Use a spatula to break up the jackfruit in the pan.
5. Add the water and vegetable cube. Mix well then stir in the flour.
Assembly:
1. Remove pastry from the refrigerator and separate into small sections.
2. Using a rolling pin or you can also use your hands and a spoon to make it flat.
3. Use a circle mold or a bowl to shape the pastry.
4. Add the filling in the center to leave space at the edges to close.
5. Brush around the edges with milk.
6. Fold over and use a fork to seal the edges.
7. Place the patties on a baking sheet lined with parchment paper.
8. Bake for 25 minutes and enjoy!
