How to make Pizzelle (classic authentic italian cookies)
PLEASE NOTE that you will need a pizzelle iron to make these cookies.
Follow the baking instructions that come along your pizzelle iron, as the instructions might slightly vary from one maker to another.
Ingredients:
3 large eggs ???? (room temperature)
1 3/4 cups of all purpose flour
1 1/2 teaspoons of baking powder
3/4 cup of sugar
1/4 teaspoon of kosher salt ????
1 1/2 teaspoon of vanilla extract
1 1/2 teaspoon of Anise extract (or any other flavour of your choice)
1 stick (1/2 cup) of unsalted butter ???? (melted and cooled)
Cooking spray
Powdered sugar (optional)
DIRECTIONS:
1) Preheat your pizzelle iron
2) In a medium size bowl, sift the flour, baking powder and salt. Blend the ingredients together with a whisk and set aside.
3) In a large bowl, whisk by hand (or you can use a hand mixer) the eggs, sugar, vanilla and anise extract until smooth and foamy.
4) Stir in the flour mixture and with a spatula combine well. Add the melted butter and stir until the batter is smooth; don’t over mix. This makes for a thick batter.
5) Lightly spray the preheated iron with the cooking spray. Drop about 1 to 1 1/2 tablespoons of batter in the Center of the mold and close the lid.
Cook the pizzelle till they are golden (usually about one minute) and transfer immediately onto a wire rack to cool. Should you have any rough edges, gently break them off.
Repeat these steps for the remaining batter.
6) Once cooled, you may lightly dust the pizzelle with powdered sugar.
Enjoy them with a nice glass of warm milk ????, coffee ☕️ or tea ????!

Italian Pizzelle Colored Cookie Recipe by Diane Lovetobake

Thin waffle like cookie is made in a pizzelle maker
Place a teaspoon of dough into multicolored sprinkles and wait 50 seconds or follow your maker for timing. Make them light or dark your choice
3 1/2 cups all- purpose flour, 2 teaspoons baking powder, 1/ 8 teaspoon of salt.
( If using unsalted butter.)
1 1/2 sticks unsalted butter, 1 1/4 cups granulated sugar, 5 large eggs room temperature, 1 Tablespoon vanilla, 3 cups multicolored sugar sprinkle, jimmies or dots.
Cream butter and sugar in a bowl, add eggs one at a time with hand mixer or stand up mixer, add vanilla. Now add flour, baking powder and salt.
Cover bowl and chill for 2 hours.
Place a rounded teaspoon of dough and roll in sprinkles, place ball into center of each form. Bake according to your maker or about 50 seconds.

Italian Pizzelle - Ivo's Version
I developed this pizzelle recipe, by modifying my mothers recipe and my mother gave me the best compliment ever - telling me she truly likes my version better. Well, that sure made my day and I sure hope that you give my recipe a try, and I hope that it will make your day as well :)

Pizzelle, mama's recipe - the Italian Classic Cookie!
Ivo’s Pizzelle Recipe
Ingredients
• 160 gr all-purpose flour (~1 ¾ Cups) (sifted if possible)
• 1 TSP Baking Powder
• 1/8 TSP cinnamon
• 3 XL Eggs (or large eggs are also fine)
• 2/3 Cup Brown Sugar
• 2 TSP Vanilla
• 1/3 Cup Extra Virgin Olive Oil or Regular Olive Oil
• 1TBSP Honey (optional – for added sweetness)
• 2 TBSP Anisette Liquor (this is optional) (or use 1 TBSP Annise Extract, also optional)
Process
• Put the flour, baking powder and cinnamon in a bowl, and whisk together - set aside.
• In another bowl, add the eggs and the brown sugar. Beat them with a hand blender for about 2 – 3 minutes. Then add the vanilla, olive oil and anisette (and optional honey), beat for another 15 seconds, and then pour into your other bowl, with the flour mixture in it
• Mix (a firm spatula works great) and continue to mix until all the flour has been absorbed. Your batter is now ready.
• Pre-heat your Pizzelle maker, when it is ready, add a heaping TBSP of batter per cookie, close lid and cook for 40 – 60 seconds. Time will vary based on your pizzelle maker, amount of heat, and the amount of batter. Basically, you want to see a light golden color.
• Remove form maker and place on a cooling rack (the pizzelle come out of the maker soft, but as they cool, they firm up)
• Continue this process until all batter is used. Depending on the size of your cookies and the thickness of your machine, you could yield anywhere from 14 – 20 pizzelle, again, depending.
• If you store the pizzelle in a plastic bag, they will stay firm, but soft. If you store them in a paper bag, or tin cookie box, they will stay firm, but will be harder and they will also keep longer this way as well

Pizzelle, mama's recipe - the Italian Classic Cookie!
Italy is known for many things, including pastries and cookies. Every Italian household has made the classic pizzelle at some point, and we are going to make them today using my mother's recipe. So quick and easy, 15 minutes is all you need and they are such a good treat. Great for children and adults - enjoy!
A traditional, classic Italian cookie “Pizzelle”
Recipe makes 12 – 15, 5” pizzelle
Ingredients:
• 260 gm flour (i.e 2 cups)
• 1 TSP baking powder
• 3 Large Eggs
• 2/3 cup sugar (you can use more or less, to taste)
• 2 TSP Vanilla Extract
• 1/3 cup grapeseed or vegetable oil
• 1 tsp Anise extract (Optional) (or use optional Anise liquor)
Process:
• Add the baking powder to the flour, mix, set aside
• In a different bowl, add the eggs and sugar, beat for 2 – 3 minutes (hand blender works great)
• Add the vanilla, oil, and optional anise extract, and beat till all incorporated (about 15 seconds should do it)
• Add your flour mixture to the bowl and blend together using a spatula or wooden spoon, until all flour is incorporated and absorbed, creating a batter.
• Preheat your pizzelle maker
• Once it’s ready, add a heaping TBSP of your batter to each pizzelle pattern, close lid and cook anywhere for 1 minute to 1 ½ minutes, depending on the color and darkness you prefer
• Remove, and place on a cooling rock – OR – if you want to shape them, then shape them immediately, while they are hot
• Serves as is, or sprinkle icing sugar on top
• Enjoy
