How To make Irish Soda Bread with Herbs

1/4 c Vegetable oil
1 Egg yolk
1 tb :
water
VARIATIONS: SCALLION SODA brEAD: 1/4 c Scallions -- thinly sliced,
-instead of herbs RAISIN SODA brEAD: 1/3 c Raisins instead of herbs
CARAWAY SEED SODA brEAD 2 tb Caraway seeds :

Preheat the oven to 325 degrees F. In the bowl of an electric mixer fitted with a paddle, combine 4 cups flour, the chopped herbs, baking powder, salt, and baking soda (breaking up any lumps). Mix on low speed for 2 minutes. Place the buttermilk and vegetable oil in a stainless steel bowl and whisk gently to combine. Gradually add the buttermilk mixture to the combined dry ingredients while mixing on low speed and continue to mix until the dough forms a ball, 30 to 40 seconds. Scrape the dough away from the paddle and turn the dough ball over. Mix on low speed for an additional 30 seconds. Flour a clean, dry surface with the remaining tbsp flour. Transfer the dough ball to the floured surface and knead with the heels of your hands until smooth. Form the dough into a round loaf. Pinch a small handful of dough and gently twist, being careful not to tear the dough from the loaf. Place the loaf, pinched side down, on a baking sheet lined with parchment paper. Whisk the egg yolk with 1 tbsp water, then lightly brush the mixture over the top of the loaf. Score the loaf by cutting a 1/4" deep "X" into the top. Bake the loaf in the preheated oven for 50 to 55 minutes. The bread is done if a hollow sound is heard when the bottom is tapped with your finger. Allow the bread to cool to room temp before slicing. Notes - the dough must be kneaded vigorously by hand; this should take about 2 minutes. Pinching and twisting the loaf to form a base will give the finished bread a tighter and taller shape. This procedure is not necessary; however, the finished loaf will be much flatter if the base is not pinched and twisted as suggested. Ingredients for 1 Irish Soda Bread:
550 g all-purpose flour
8 g salt
10 g granulated sugar
5 g baking powder
5 g baking soda
30 g cold butter
1 large egg
420 g buttermilk
2 tbsp oats or any other grain/herb of your choice
Correction: bake your bread for about 15 minutes à 220°C (430°F) and then reduce the temperature of the oven to 200°C (390°F) and bake for another 20 to 30 minutes.
Cheddar Rosemary Irish Soda Bread
The easiest, tastiest bread you'll have within the hour.
Soda Breads are a staple of Irish cuisine. Most people associate it with St. Patricks Day, but if you wait until March to make this, you're missing out.
INGREDIENTS:
2 cups apf
1 tsp baking soda
1 tsp garlic salt
1 tsp caraway seeds
2 tsp fresh chopped rosemary
1 cup cheddar
2 eggs
3/4 cup buttermilk
3 tbs oats
INSTRUCTIONS:
1. Preheat oven to 425F
2. Mix together flour, baking soda, salt, herbs and seeds.
3. Whisk together eggs and buttermilk. Pour in the buttermilk mixture to the flour.
4. Gently mix the dough until it just comes together.
5. Shape into a ball. Glaze with any remaining buttermilk and top with more seeds and herbs. Top with oats.
5. Score an x into the bread.
6. Bake at 425F for 28 minutes.

Instructions to a simple no yeast grandma's Irish soda bread recipe anybody can bake:
- First, in a large bowl sift and add 4 cups of AP flour
- Now add 1 tsp of baking soda
- Followed by 1 tsp of salt
- And finally, pour in your 1 3/4 cup buttermilk OR 1 3/4 cup buttermilk with 1 tsp of vinegar
- Mix everything together in the bowl
- Preheat the oven to 425 F
- Start kneading your dough
- Once you have a large ball of dough, score a plus sign onto the top
- In an oven-safe dish of your choice, add your dough
- Cover the entire pan in aluminum foil
- Bake in the oven for 30 minutes
- Take the aluminum foil off the dish
- Bake for another 15 minutes and your soda bread is ready to serve
