How To make Irish Cream Cheesecake
24 oz Cream cheese, softened
2 c Vanilla crumbs
1/3 c Butter, melted
1/2 c Sugar
3 lg Eggs
2 tb Flour
1 c Irish cream liqueur
1 t Vanilla
1 c White chocolate, grated
Preheat oven to 350 degrees. Combine the crumbs and butter in a medium-size bowl. Press on the bottom of a 9-inch springform pan. Bake in oven for five minutes.
Remove and set aside. Cream the cheese and sugar. Beat in the eggs, flour, liqueur and vanilla until smooth. Pour mixture onto crust and bake for 40 minutes. Turn off oven and leave in oven for another 15 minutes. Remove from oven and let cool. After cheesecake has cooled, sprinkle white chocolate on top. Refrigerate overnight. Ingredients:
100g/3½oz butter
250g/8¾oz cookies/biscuits
600g/1lb 5oz cream cheese
25ml/1fl oz Baileys or my own Irish cream liqueur recipe
100ml/3½oz Icing sugar
300ml/10½oz Thickened/whipping cream
100g/3½oz Chocolate

Mini Baileys Cheesecakes [No Bake]
Serves: 12 Cupcakes.
Prep Time: 20 mins.
Cook Time: 0 mins.
Refrigerate Time: 7-10 hours.
INGREDIENTS:
1⅞ cups (6½oz/190g) Digestive Biscuits.
⅓ cup ( 3oz/80g) Melted Butter.
2 cups (15oz/450g) Cream Cheese (full fat).
⅓ cup (2½floz/75ml) Baileys Irish Cream.
1 cup (3½oz/100g) Powdered Sugar.
¾ cup (6½floz/200ml) Double Cream.
⅓ cup (2oz/60g) Grated Chocolate.
Chocolate shavings/pieces for decoration.
METHOD:
1. Place the digestive biscuits inside a zip lock bag and gently crush to breadcrumbs using a rolling pin.
2. Melt the butter in a Microwave for approximately 1 minute until the butter is a liquid.
3. In a large bowl, add the biscuit crumbs.
4. Make a well and pour in the butter.
5. Mix well together.
6. Line a cupcake tray with 12 paper cupcake cases.
7. Put an equal amount of biscuit base into each cupcake case.
8. In another bowl add cream cheese, powdered sugar and Baileys Irish Cream.
9. Mix well together with a whisk, until creamy smooth.
10. In a third bowl whisk double cream until it becomes whipped.
11. Fold the whipped cream into the cream cheese mix.
12. Be sure to fold by hand so as to not over mix.
13. Add grated milk chocolate and fold again by hand.
14. Using an ice cream scoop divide the mix evenly between the 12 cases.
15. Refrigerate for 7-10 hours to allow the cheesecakes to fully set.
16. Serve straight from the fridge.
17. Decorate with chocolate shavings for that restaurant look.

Love Baileys Irish Cream Liqueur? Crazy for cheesecake? Well then you have to try this Baileys Irish Cream Cheesecake! Featuring a chocolate cookie crust, creamy Baileys Irish Cream Cheesecake filling, and a thick layer of chocolate ganache. It’s out of this world flavorful! And it’s the perfect St. Patrick’s Day dessert!
Irish Cream Cheesecake
Irish Cream Cheesecake takes the cheesecake to another level! This cheesecake has all the bells and whistles of a traditional cheesecake with the wonderful addition of Irish cream. Irish cream is made with Irish whisky and other flavors as heavy cream, chocolate, vanilla and coffee. The taste a nd texture of this cheesecake is rich, creamy and full of flavor. As a finishing touch, it is topped with dark chocolate shavings and compliments the overall flavor of this Irish cream cheesecake brilliantly.
Here is the recipe:
Irish cream:
470g/ 2 cups heavy cream
249g/ 1 cup Irish whisky
132g/ 2/3 cup granulated sugar
14g/ 1 tbsp. light brown sugar
14g/ 1 tbsp. melted dark chocolate
8g/ 2 tsp instant coffee
4g/ 1 tsp vanilla
(refrigerate until ready to use)
192g/ 1.5 cups tea biscuits (crust)
75g/ 1/3 cup melted butter (crust)
14g/ 1 tbsp. light brown sugar (crust)
680g/ 3-8oz packets cream cheese (room temperature)
150g/ 2/3 cup granulated sugar
64g/ 1/3 cup light brown sugar
60g/ 1/4 cup sour cream
155g/ 2/3 cup Irish cream (see recipe above)
3 eggs
6g/ 1.5 tsp vanilla
30g/ 1/4 cup cornstarch
Bake crust @ 350F/176C for 10 minutes
Bake cheesecake @ 350F/176C for 50 minutes
Turn oven to OFF and allow cheesecake to rest in over for 30 minutes
Allow cheesecake to cool at room temperature (60 minutes)
Chill/setup cheesecake in refrigerator for 6 hours/overnight
Brush top of cheesecake with Irish cream (see recipe above)
Top with shaved dark chocolate (28g/ 1oz shaved chocolate)
Note: This recipe contains liquor (Irish whisky).
An 8 or 9 inch springform pan is recommended for this cheesecake recipe.
