How To make Herbed Breakfast Muffins
1 tablespoon margarine
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons fresh herbs -- * see note
1 cup milk
1 large egg
3 tablespoons margarine
* Use fresh chopped basil if serving muffins with a tomato dish. Parsley, dill or chives can also be used if you prefer.
1. Grease 12 muffin cups with 1 tablespoon margarine. Heat oven to 450
degrees. 2. Combine in a mixing bowl flour, sugar, baking powder and salt. Add
chopped herbs. 3. Combine remaining ingredients and add all at once to flour mixture.
Stir just enough to moisten. Batter will be lumpy. 4. Fill muffin cups 2/3 full. Bake 20-25 minutes until golden brown.

Veggie Egg Muffins || Breakfast Recipe

Recipe: (Makes 8-10 egg muffins)
- eggs 6
- spinach 1.5 cup
- onion 1
- tomato 1
- mushrooms 3-4 tbsp
- milk 3-4 tbsp
- salt 1/4 tsp
- black pepper 1/4 tsp
- oyster sauce 1 tbsp
- oregano 1/4 tsp
- mozzarella cheese optional
- oil
Method:
Step 1: In a pan, add some oil and all the veggies. Cook for 7-8 minutes until the water evaporates.
Step 2: In a bowl, Crack in the eggs, add milk, oyster sauce, herb and all the veggies. Mix them well.
Step 3: Grease the muffin tin, pour the egg mixture. Add mozzarella cheese on top.
Step 4: Bake the eggs for 20-25 minutes at 180 C.
Step 5: Take them out from the tin once they are slightly cooled.
Enjoy with ketchup or any hot sauce!
