Bean Soup With Vegetables And Smoked Pork Ribs | How to make bean soup.
Bean soup is quite high on my list of favorite soup recipes. I'm preparing several types and today I would like to show you one of the ones I like the most.
It's a thick bean soup with plenty of vegetables and a solid amount of smoked pork ribs. I start by cooking the ribs in salted water in order to prepare a simple stock with a smoky flavor that will give this bean soup a specific taste that I love so much.
This bean soup is very easy to cook, but it does take a few hours to prepare. Bean need to soak in water for a few hour or overnight, so plan ahead.

Braised Country-Style Ribs with White Beans | Emeril Lagasse
Tender and full of flavor, this hearty dish is easy, delicious, and inexpensive to make. It makes for the perfect comforting dinner on any chilly night.
BRAISED COUNTRY-STYLE RIBS WITH WHITE BEANS
SERVES 6 TO 8
3 pounds country-style pork ribs or rib chops
1 tablespoon coarse salt
2 teaspoons freshly ground black pepper
1/4 cup olive oil
2 cups diced onions
1 cup diced green bell pepper
1 cup diced celery
2 tablespoons minced garlic
1/4 cup all-purpose flour
1/2 pound dried white navy beans
8 cups chicken or beef stock
1 (14 1/2-ounce) can diced tomatoes
2 tablespoons chopped fresh sage leaves
Steamed white rice, for serving (optional)
Cooked kale, for serving (optional)
Place ribs on a rimmed baking sheet and season both sides with salt and pepper. Heat a large Dutch oven over medium heat. Add olive oil and heat until hot. Working in batches, add ribs and sear until golden brown, about 5 minutes. Turn ribs and sear, about 5 minutes more. Transfer ribs to baking sheet and repeat process with the remaining ribs.
Add onions, bell peppers, and celery to the Dutch-oven and cook, stirring occasionally, until onions are translucent, and bell pepper and celery are lightly caramelized, 6 to 7 minutes. Add garlic and cook until fragrant, about 30 seconds. Sprinkle vegetables with flour and stir with a wooden spoon until well combined. Cook, stirring constantly, for 2 minutes. Add stock to the pot and stir to combine. Bring to a boil and reduce heat to a simmer. Add diced tomatoes, beans, seared ribs, sage. Cover and let simmer, stirring occasionally, to prevent sticking, for 1 1/2 hours. Adjust seasoning and continue to cook until both the ribs and the beans are tender, about 30 minutes more. Serve hot over cooked kale or steamed rice, if desired.

Note: I'm calling it a soup when it actually has the consistency of a stew. Therefore, I am changing the title to stew instead if soup. It's delicious none the less. I enjoyed every bit of it.
