Ingredients (25 to 30 cookies)
110g unsalted butter
Sugar powder 80g (sugar possible), salt 1g
2 yolks, a little vanilla extract
all-purpose flour 200g (or cake flour)
Corn Starch 10g (You can omit it, but the cookies will be more crispy if you add it.)
TIP
Butter, yolk at room temperature for 1 hour or more
Use the oven after preheating

A summertime tradition for us is a trip back to the heartland, and a stop in Ohio Amish Country - one of our favorite getaway spots. When we can't get there, the next best thing is to pull out the old Cooking with Elsa cookbook, and make a classic Amish recipe - soft and sweet Buttermilk Cookies, with brown sugar icing. Everybody is going to love these!

AMISH BUTTERMILK COOKIES
From Amish Home Cooking with Elsa, copyright 1999
Cookies:
2 cups packed brown sugar
1 cup butter, melted
1 tsp vanilla
2 eggs
4 cups flour
1 cup buttermilk
2 tsp baking soda
2 tsp baking powder
Stir together sugar and butter until smooth. Add vanilla and eggs, and beat well.
Stir the baking powder into the flour, and the baking soda into the buttermilk. Add the flour mixture and the buttermilk mixture alternately to the sugar/butter in a large mixing bowl, beginning and ending with the flour. Stir dough til smooth. Store tightly covered in refrigerator, several hours or overnight.
Preheat oven to 375 degrees F. Drop cookie dough in large spoonfuls onto an ungreased cookie sheet, leaving plenty of room between – they do expand. Bake 10 minutes at 375, until light brown in color. While hot, use a spatula to loosen from the cookie sheet, and put on a rack to cool.
Frosting:
½ cup butter
1 cup packed brown sugar
¼ cup milk
Pinch of salt
1 tsp vanilla
2 cups powdered sugar
Melt the butter in a saucepan. Stir in brown sugar, until smooth and dissolved. Remove pan from heat, and add milk, salt, and vanilla. Set aside and cool to lukewarm. Gradually mix in powdered sugar until desired consistency. Spoon icing over cooled cookies. Delicious!

Flaky layered classic buttermilk cookies are so easy to make at home. Much much better than the store bought cookies. Easy to make, quick and simple recipe, what else you need? These cookies tastes delicious if served warm with tomato soup. You can even have it with strawberry or any other fruit jam. Even you can eat it by applying some butter on the top. Just a tip: Don't forget to microwave them before eating!
Well, lets take a look at the ingredients of this recipe.
Ingredients
All purpose flour - 2 and half cup (325g apprx.)
Cold milk - 3/4 cup
Cold butter - 1/2 cup or 1 stick (salted/unsalted)
White vinegar - 1tbsp
Baking powder - 2 and 1/2 tsp
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Sugar - 1/2 tsp

These were a hit with my family last holiday season. This year, I'm here to show you how to make vanilla buttermilk cookies!
GROCERY LIST:
3/4 cup Softened Butter
1.5 cups Sugar
2 Eggs
2 tsp Vanilla Extract
1/2 tsp Salt
1/2 tsp Baking Soda
2/3 cup Buttermilk
3 cups Flour
Icing:
3-4 tbsp Buttermilk
1.5 cups Powdered Sugar
1 tsp Vanilla Extract
Method:
1. Cream butter and sugar together.
2. Add eggs and vanilla, mix.
3. Add buttermilk and mix.
4. Add salt, baking soda & flour, mix.
5. Scoop onto a lined baking sheet.
6. Bake at 350 degrees Fahrenheit for 12-14 mins.
7. Mix icing until combined.
8. Dip cooled cookies in icing & allow icing to set before tasting!
