Craig's Cheesy Baked Southern Grits
Here's a quick, delicious recipe for Southern Style Cheesy Baked Grits. **Full Recipe in Description**
This recipe always comes out perfectly and makes a great main breakfast dish! It is great as a main dish, with sausage as a side (or you could crumble it up and add it before you bake in the oven). It is also a wonderful side dish for sausage biscuits, fried chicken, meatloaf, and is very easy to prepare.
Here's the recipe:
Ingredients:
1 ½ cup (225 g) “5-minute” grits. I prefer the Jim Dandy brand.
6 cups (1,440 ml) water
2 Tablespoons (30 g) butter
2 teaspoons (12 g) salt
¼ teaspoon (125 mg) ground pepper
3 eggs
1 Tablespoon (15 g) baking powder
¼ cup (40 g) all-purpose flour
2 cups (1 bag) (226 g) cheddar cheese, shredded (divided)
Directions:
Step 1: Preheat oven to 325 degrees (160 C).
Step 2: On the stovetop, bring the water and butter to a boil. Whisk in grits, cover and simmer at lowest setting for 5 minutes.
Step 3: Once grits are cooked, remove from heat and allow to cool for about 10 - 15 minutes. In a mixing bowl, whisk eggs, flour, and baking powder together. Quickly whisk in egg mixture and 1 cup of cheddar cheese.
Step 4: Spray a baking dish with cooking spray and pour in grits mixture. Bake at 325 degrees for 45 minutes. Remove and spread remaining cheddar cheese on top. Bake for additional 5 minutes.

CHEESE GRITS CASSEROLE WITH SAUSAGE, BACON, & EGGS A TASTE OF SOUTHERN COMFORT
Cheese grits casserole with sausage, bacon, & eggs a taste of southern comfort. Cheese grits casserole is a southern dish that can be made not only for brunch but for breakfast as well. Cheese grits casserole is a make ahead dish that can be frozen for 3-6 months for future breakfast enjoyment. Cheese grits casserole is an interchangeable recipe that can be adapted with many combinations. Cheese grits casserole can be prepared in the oven or in a crock-pot. Breakfast casseroles are a quick meal that can feed the masses both family and friends. Southern comfort comes in many forms such as this cheese grits casserole you can add sausage, bacon, veggies, and of course quick grits. Quick grits give cheese grits casserole the same loving flavor as old fashion grits but in much less time.

Ingredients - Quick grits, Sharp cheddar cheese, 2 large eggs, Evaporated milk (1) can, heavy cream 2/3 cup or milk (milk of your preference), Sweet and smoky (4 TBSP), Black Pepper 4 TBSP, Garlic powder 3 TBSP, toppings of your preference.
Preparation instructions as follows:
- slice sausage of your choice or hotlink sausage
- pan sear 3-5 mins on medium heat, set aside.
GRITS PREPARATION
- Quick grits cook within 7-10 mins on medium heat on stove top ensure to stir occasionally.
- adjust heat to medium high heat bringing water to a boil once water is bowling add 1 1/2 cup of quick grits, stir occasionally.
GRITS COOKING COMPLETE TURN OFF STOVE TOP AND DO THE FOLLOWING
- once to your desired thickness add 1 TBSP hot sauce (optional), 2/3 Heavy cream this will give grits a creamy richness, 4 TBSP Sweet & smoky seasoning, 4 TBSP Black Pepper, & 3 TBSP Garlic powder. Mix all ingredients well.
- add your cooked sausage as well as your desired chosen toppings mix well and add into grits. Pour into a GREASED bake sheet.
OVEN BAKE INSTRUCTIONS
- adjust oven to 350, bake casserole for 45 mins, remove from oven to add additional cheese of your preference and toppings, return to oven for 10-12 additional minutes to allow cheese to melt completely. Please serve, eat, & enjoy!!!

Down here in the South we love Grits; for Breakfast, Lunch, Dinner, you name it; A Classic Southern Staple!
So today’s Recipe I am making Cheese Grits Casserole; Creamy, Cheesy, and full of Flavor! Great to serve for Breakfast any day of the week and Sunday Brunch, this will be a crowd pleaser and everyone will enjoy this Delicious Dish!

1 pound bulk pork sausage (regular, hot, maple, sage, or turkey sausage)
4 cups water
1/2 tsp kosher salt
1 cup uncooked quick cooking grits
1 1/2 cups shredded colby jack cheese (or any cheese), divided
2 tbsp unsalted butter
3 lightly beaten eggs
1/2 cup evaporated milk
Preheat Oven to 350 Degrees
Grease a 9x13 inch long baking pan with cooking spray or butter, set aside.
In a cast iron skillet or large pan over medium heat, add sausage and cook until brown about 7-9 minutes (stirring occasionally); drain the access grease and set aside.
In a large pot over high heat, add water and bring to a boil. After it comes to a boil, add salt and slowly add and whisk in the grits. Reduce the heat to low, cover and cook the grits for 5-7 minutes (whisking occasionally). Remove the grits from the heat and add in 1 cup of the cheese and the butter, stir or whisk until melted. Add and stir in the eggs, evaporated milk and cooked sausage until well incorporated. Pour grits mixture into the pan and sprinkle the remaining 1/2 cup of cheese right on top. Bake uncovered for 25-30 minutes or until center is set. Remove from the oven and cool on wire rack for 10 minutes. Serve and enjoy!
