Old-Fashioned CHEESY GRITS!! Excellent for breakfast, brunch, or anytime!! Recipe below...
CHEESY GRITS
(Serves 8)
Preheat oven to 375 degrees F.
1- 9X9 Baking Dish, lightly greased
2 tablespoons butter
1 garlic clove, minced, optional
4 cups (32 ounces) low sodium chicken broth or vegetable broth
1 cup grits (not instant)
2 cups (8 ounces) Sharp Cheddar Cheese, shredded, plus additional for topping is optional
2 eggs, beaten
1/4 teaspoon salt, optional
6-8 drops pepper sauce or more, optional
1. In a 2-1/2 sauce pan, over medium-heat, melt butter. Add garlic; cook and stir 30 seconds. Add broth; bring to a boil over high heat. Add grits. Stir while reducing heat temperature to low. Cover and simmer for 15 minutes.
2. Remove cooked grits from heat. Stir in hand fulls of cheese, at a time, until melted. Beat eggs in small bowl until yellow pale in color. Stir 1 spoonful of hot girts into eggs until well blended. Mix eggs into remaining grits until well blended. Season to taste with hot pepper sauce.
3. Bake, uncovered, 40-45 minutes or until golden brown and center is set. Top with addition cheese, optional.

Ingredients:
6oz boneless skinless chicken thighs, diced
Seasoning: lightly coat with salt, pepper, garlic, onion, chili powder, 1/2 tspn Cajun seasoning
10g hot honey
2 packets Instant Grits
5g Nutritional yeast (this is for extra cheesy flavor - omit if you can’t find it)
30g Velveeta Shreds (or reduced fat cheddar)
30g 2% plain Greek yogurt
Top with Louisiana hot sauce, more hot honey and chives, and enjoy!

GRAB THIS STUFF
1 tablespoon unsalted butter
6 cloves garlic, minced
3 cups whole milk
1 ½ cups fine cornmeal or grits
¼ teaspoon kosher salt
¼ cup freshly shaved Parm
Crushed red pepper
DO THIS
Melt the butter, add garlic and cook 2 minutes, low heat. Add milk and bring to a simmer. Whisk in cornmeal. Cover and simmer 10 to 15 minutes. Portion onto plates and top with Parm and crushed red pepper.
