How To make Jalapeno Cheese Grits Casserole
4 cups water
1/2 teaspoon salt
1 cup quick-cooking grits
1 cup sharp cheddar cheese
grated
8 ounces process cheese w/jalapeno peppers :
cubed
1/4 cup butter or margarine
3 eggs -- lightly beaten
2 tablespoons chopped jalapeno peppers
1 tablespoon Worcestershire sauce
paprika
Preheat oven to 350 degrees. Grease a 2-quart baking dish. Bring water a nd salt to a boil in a large saucepan. Stir in grits. Cover, reduce heat to l ow, and cook 5 minutes, stirring occasionally. Remove pan from heat. Stir in cheeses and butter until melted. Add eggs , jalapeno pepper, and Worcestershire sauce; blend well. Pour mixture into prepared dish. Sprinkle with paprika as desired. Bake 40-45 minutes or until set. Cool 10 minutes before serving. .

-1/2 cup stone-ground grits
-1/3 cup Comte or Cheddar cheese, shredded
-1 jalapeño, diced small
-1 cup milk
-1cup water
-2 Tbs butter
- salt and pepper to taste
-sliced green onion for garnish

Tex-Mex green chile cheese grits are delicious and easy to make.

Hillbilly Jilly Tex-Mex Chile Cheese Grits
Ingredients
● 1 cup of 3 minute grits
● 3 cups of water
● 4 tablespoons butter - softened
● 1 1/2 cups grated cheese
● 1/2 cup of milk
● 1/4 to 1/2 cup of chopped green chiles
● 2 eggs beaten
● 1 teaspoon salt
Directions
1. Preheat oven to 350 degrees
2. Bring 3 cups water and salt to boil in medium saucepan
3. Beat eggs then mix with milk
4. Add grits to boiling water - cook for 3 minutes or until thickened – stir frequently
5. Add cheese, butter and Hatch green chiles to grits and simmer until butter is melted
6. Now add egg and milk mixture – stir well while adding
7. Pour into 2-quart baking dish and bake for about 45 minutes
8. Remove from oven and sprinkle top with grated cheese
9. Allow to cool for about 10 minutes before serving
Note: Stir often while making and adding ingredients to grits! Cheese melts naturally as grits cool.
