These are the cheesiest Cheese Grits you'll ever have! Kick them up with some pickled jalapenos and you'll have yourself quite the breakfast! My Jalapeno Cheddar Grits Recipe is quick & easy. I used to not be a fan of Grits, but after having these, I've definitely conformed! This is the perfect Southern Recipe for any breakfast!

Ingredients:
- 2 cups Quick Cook Grits
- 8 1/2 cups water
- 2 1/2 cups sharp cheddar, shredded
- 5 whole jalapenos, pickled or fresh
- 1 stick butter, salted
- 3 large eggs, beaten
- hot sauce, few dashes
- garlic salt, to taste
Directions:
Preheat oven to 350ºF. Bring water to a boil in a large sauce pan, and add the grits. Cook the grits per the directions on the back of the box. Once they are ready, add them to a glass baking dish. Add the butter, eggs, jalapenos, hot sauce, garlic salt, & half of the cheese. Whisk well! Sprinkle the other half of the cheese on top of the grits. Bake for 1 hour.
Serve & enjoy :)

Down here in the South we love Grits; for Breakfast, Lunch, Dinner, you name it; A Classic Southern Staple!
So today’s Recipe I am making Cheese Grits Casserole; Creamy, Cheesy, and full of Flavor! Great to serve for Breakfast any day of the week and Sunday Brunch, this will be a crowd pleaser and everyone will enjoy this Delicious Dish!

1 pound bulk pork sausage (regular, hot, maple, sage, or turkey sausage)
4 cups water
1/2 tsp kosher salt
1 cup uncooked quick cooking grits
1 1/2 cups shredded colby jack cheese (or any cheese), divided
2 tbsp unsalted butter
3 lightly beaten eggs
1/2 cup evaporated milk
Preheat Oven to 350 Degrees
Grease a 9x13 inch long baking pan with cooking spray or butter, set aside.
In a cast iron skillet or large pan over medium heat, add sausage and cook until brown about 7-9 minutes (stirring occasionally); drain the access grease and set aside.
In a large pot over high heat, add water and bring to a boil. After it comes to a boil, add salt and slowly add and whisk in the grits. Reduce the heat to low, cover and cook the grits for 5-7 minutes (whisking occasionally). Remove the grits from the heat and add in 1 cup of the cheese and the butter, stir or whisk until melted. Add and stir in the eggs, evaporated milk and cooked sausage until well incorporated. Pour grits mixture into the pan and sprinkle the remaining 1/2 cup of cheese right on top. Bake uncovered for 25-30 minutes or until center is set. Remove from the oven and cool on wire rack for 10 minutes. Serve and enjoy!

Grits Casserole (Legacy Cooking)
There is a reason this is on Page One of my Cook Book. Grits casserole is one of my most requested recipes. Mouthwatering, and comforting. There is nothing like the first bite. Great for any occasion, any season. I have taken it camping, to potlucks, to family gatherings. Everyone is always happy to see this casserole. Recipe below
Ingredients:
3 Cups water
1/2 tsp Salt
3/4 Cup Grits, old-fashion or quick is fine.
3/4 Cups Butter
1 lb Spicy Breakfast Sausage (Hot is a must)
1 Jalapeno (Optional)
1/2 lb Velveeta Cheese
2 Eggs beaten
Let's Cook: Cook and Crumble sausage. Set aside.
Combine water, butter and salt and bring to a boil.
Slowly stir in grits. Stir constantly to prevent lumps. When it starts
to thicken, turn off, or remove from heat. Tempur the eggs, then stir
into grits. Turn the heat back on medium, and add cheese and Jalapeno.
Mix until smooth, then add sausage. Pour into greased baking vessel and back for one hour at 350 degrees.
NOTE: this recipe can easily be doubled. Double all ingredients
except for the sausage. 1 lb is enough.
