Quick-cooking grits are your key to success here. We’re going to start at the stovetop but you don’t want to spend all your time whisking and quick grits keep things fast and easy. You’ll also need chicken broth, butter, half and half, eggs, and two kinds of cheese. As far as I’m concerned, the perfect combination for this is Monterey Jack and a sharp cheddar. Monterey Jack brings the gooey creaminess and the cheddar brings more of a sharp bite, which is the perfect companion to grits’ subtle sweetness.
INGREDIENTS
6 cups chicken broth
2 cloves garlic, minced
2 cups quick-cooking grits
2 cups sharp cheddar cheese, grated
2 cups Monterey Jack cheese, grated
2 tablespoons butter
1/2 cup half and half
4 eggs, beaten
Kosher salt and freshly ground black pepper, to taste

Here's a quick, delicious recipe for Southern Style Cheesy Baked Grits. **Full Recipe in Description**
This recipe always comes out perfectly and makes a great main breakfast dish! It is great as a main dish, with sausage as a side (or you could crumble it up and add it before you bake in the oven). It is also a wonderful side dish for sausage biscuits, fried chicken, meatloaf, and is very easy to prepare.
Here's the recipe:
Ingredients:
1 ½ cup (225 g) “5-minute” grits. I prefer the Jim Dandy brand.
6 cups (1,440 ml) water
2 Tablespoons (30 g) butter
2 teaspoons (12 g) salt
¼ teaspoon (125 mg) ground pepper
3 eggs
1 Tablespoon (15 g) baking powder
¼ cup (40 g) all-purpose flour
2 cups (1 bag) (226 g) cheddar cheese, shredded (divided)
Directions:
Step 1: Preheat oven to 325 degrees (160 C).
Step 2: On the stovetop, bring the water and butter to a boil. Whisk in grits, cover and simmer at lowest setting for 5 minutes.
Step 3: Once grits are cooked, remove from heat and allow to cool for about 10 - 15 minutes. In a mixing bowl, whisk eggs, flour, and baking powder together. Quickly whisk in egg mixture and 1 cup of cheddar cheese.
Step 4: Spray a baking dish with cooking spray and pour in grits mixture. Bake at 325 degrees for 45 minutes. Remove and spread remaining cheddar cheese on top. Bake for additional 5 minutes.

How to make Shrimp & Cheesy Grits Casserole
SHRIMP & GRITS CASSEROLE
1 Lb. Shrimp
1 c. Grits
2 Eggs ( beaten )
2 c. Stock or Broth
2 c. Half & Half or Cream
4 oz. Cream Cheese
1 Onion ( diced )
8 oz. Cheese ( your favorite )
2 - 4 Tbsp Butter
1 - 2 Tbsp EV Olive Oil
Season to Taste
Betty's Tex-Mex Cheesy Grits Casserole
Betty demonstrates how to make a Tex-Mex Cheesy Grits Casserole. This is a grits and cheese casserole with a Mexican flair.
Tex-Mex Cheesy Grits Casserole
4 cups water
1 teaspoon salt
1 cup quick grits
4 tablespoons butter, melted
18 ounces frozen mirepoix blend, thawed (or about 1/3 pound each of chopped onion, chopped green pepper, and chopped celery)
4 additional tablespoons butter
3 tablespoons all-purpose flour
1 ½ cups milk
2 cups shredded cheddar cheese
4-ounce can diced green chiles, with liquid
salt and pepper, to taste
cooking oil spray
½ can to 1 whole can (10-ounce size) green chile enchilada sauce, for topping
In a large pot, bring water to a boil over medium to high heat. Add salt and grits and return to a boil. Reduce heat to low and cook grits 3 to 5 minutes, stirring often, until thickened. Set aside. In a large skillet, melt 4 tablespoons butter. Add thawed mirepoix blend to butter and saute over low to medium heat until softened. Remove sautéed vegetables to a bowl and set aside. In the same skillet, melt 4 tablespoons butter over medium heat and stir in flour. Cook and stir, until mixture is bubbly. Add milk and cook until sauce thickens. Stir in cheddar cheese and green chiles. Season with salt and pepper to taste. Pour grits mixture into 9-inch by 13-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Pour green chili enchilada sauce over top, using ½ can to 1 whole can, as desired. Bake at 350 degrees (F) for about 30 to 40 minutes, or until bubbly and beginning to brown. Remove from oven and let rest at least 10 minutes before serving. Enjoy! --Betty
